Cooking Temperatures?!


Question: When a recipe says ''PREHEAT THE PAN OVER MEDIUM HEAT''...what is medium heat?

I'm trying to figure out the actual temperatures for the following:
Simmer = oF
Low Heat = oF
Medium Heat = oF
Medium-High Heat = oF
High Heat = oF
*Boiling = oF

*Now I know that water boils at 212oF/100oC but what I want is the temperature of the water at a rolling boil!

Oven or rangetop temps are as follows:
Simmer 200 degrees or less
Low 250 degrees
Med. 350 degrees
Med. High 375 degrees
High 400 - 425 degrees
Boiling Highest setting ( 450 degrees )
These are American settings as we know them.

Not a valid question because, a pan on simmer will boil, eventually. There by reaching 212 degrees F

medium heat refers to a temp of 350-400 F.
Simmer: 122-212F
Low: 212 F
Medium: 212 F -356 F
Medium High: 356 to 392 F
High: 392 to 500
Rolling boiling water : above 248 F
