I have a crock pot recipe that calls for beef brisket, but all my grocer has is pot roasts.?!
Answers: can I use the pot roast instead? Will it cook the same and require the same amount of time in the crock pot?
They aren't the same. A pot roast will tend to be thicker and is a different part of the cow.
In a slow cooker, you should still end up with a fine result. The big thing to watch out for it to ensure that the entire piece of meat is covered with liquid. A pot roast may tend be "larger" than the equivalent brisket.
I know, that doesn't seem to make sense. But trust me on this.
I'd assume so. YUMMMY sounds so good.
You can't go wrong with a slow cooker. Anything you put in cooks 8-10 hours on low. It will be great.
Brisket is a lower cut of meat and usually requires a long cooking time, so the pot roast will probably be better. You can also ask the grocery store butcher if they ever carry brisket...
I am a former chef and a pot roast is fine, it is actually a better cut, brisket is alot leaner, stringy and is only good well cooked and falling apart.
For your recipe, look towards a chuck roast, blade roast or short rib roast, they have more fat for a more flavourful pot roasted or crockpot dish, I like the short rib roast, it has more flavor and the fat is not as waxy, I browm mine in a pan or in the oven, then use lots of onions and various seasoning to make a good flavored stew or pot roast, do not use alot of salt as it toughens the meat and the slow cooked meat can be to salty, I use stock cubes or canned broths, even a veggie one for a nice flavor and not to seasoned.
The brisket is a tougher cut of meat, and usually fattier. The cooking time should be the same for either - the roast will be most likely be more tender. You should have no problem using the roast. It will be good - MMMMmmm!
If you use a roast do not cook it for a very long time. It will fall apart. I know cause I also have a crock pot that I just got a few months ago. I suggest that if you are looking for a brisket try and find a local butcher in your area or get online and check your markets and in CA we have alot of the grocery stores online.
Go to a meat store (Butcher).
I'm sure you could go on-line and find recipes for pot roast that can be done in the crock pot as well.
