What meat dish could I do in a crockpot for an office holiday party?!
Answers: I can start crockpot at 7:30 a.m. We eat at 11:30. Or could I do it the night before and finish it in the morning at work?
You can throw these together the morning and then dump it in the crockpot and leave it on warm or low. You can also make them the night before, put them in the fridge and then put them in the crockpot the next morning on high. Warning though... there won't be any leftovers... these are delicious!
Cranberry Party Meatballs
2 (1-pound) bags frozen cocktail-size meatballs (about 64 meatballs)
1 (16-ounce) can Ocean Spray Jellied Cranberry Sauce
1 (12-ounce) bottle chili sauce
1 teaspoon ground cumin
1/4 teaspoon cayenne
Combine cranberry sauce, chili sauce, cumin and cayenne in a large saucepan. Cook over medium heat, whisking occasionally, until the cranberry sauce is melted and smooth.
Add meatballs; stir gently to coat. Cook over medium-low heat, stirring occasionally, 12 to 15 minutes or until meatballs are heated through. Place in chafing dish or slow cooker to keep warm.
Makes 30 servings.
make a rump roast, start it at like 10 at night...
all you have to do is put the roast in there with about 1 cup of water, buy some Lipton Beefy Onion soup mix, and pour that on top of the roast.. and let it cook on low all night long.
then in the morning.. take a fork (it will be very tender) and shred it apart, with all the juices still in the crock pot.
and then take to work in the crock pot, keep it on low, and eat it on sandwiches.. NOTHING is better !! :)

Beef in Red Wine
olive oil cooking spray
3 slices nonfat turkey bacon, cut into 1 inch pieces
3 pound piece rump roast
1 large onion, peeled, stuck with 4 whole cloves
2 ounces grated carrot
3 large cloves garlic, sliced thin
1 cup dry red wine
1 bay leaf
4 sprigs thyme
1/4 cup chopped flat leaf parsley
2 large russet potatoes, peeled and cut into 6 pieces
2 medium carrots, peeled and sliced
1 pound green beans, ends snipped
butter flavored cooking spray
8 ounces mushrooms
freshly ground pepper
Lightly coat a large nonstick skillet with cooking spray. Add the turkey bacon and saute until it begins to crisp. Add the beef and brown on all sides.
Transfer turkey bacon and beef to a 3 1/2 quart or larger slow cooker. Add onion, grated carrot, garlic, wine, bay leaf, thyme and parsley.
Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.
When beef is almost done, cook potatoes in boiling water to cover until almost tender, about 10 to 15 minutes. Add carrots and green beans. Continue to cook for another 4 to 5 minutes.
Drain vegetables and keep warm. Meanwhile, lightly coat a large nonstick skillet with butter flavored cooking spray. Add the mushrooms and saute over high heat until mushrooms are tender and all liquid is absorbed.
Transfer beef to a carving board and let stand for 10 minutes before slicing into thin, against the grain, slices. Arrange beef slices on a heated serving platter. Discard clove stuck onion, bay leaves and thyme sprigs.
Stir cooked vegetables and mushrooms into pan juice of the slow cooker to warm. Spoon the vegetables and pan juices over the beef.
Season to taste with pepper. Serve immediately.
Makes 6 servings with leftovers.
Chili! It's a crowd pleaser and the crockpot is perfect for keeping it bubbling away. A co-worker of mine does it for every potluck and it's always a hit!
Bonus if you bring a side of corn bread!
I love my crockpot. But it is hard to find allot of stuff to make in it. My favorite is chili.. a nice spicy chili. Or a beef stew.

You could do all kinds of things. Something simple that would only take a few hours to simmer is lil smokies in bbq sauce. That is usually a big hit at parties. Get about 3 packs of lil smokies at the store and the a bottle of bbq sauce would do. Simmer on low for four hours and when its time for the party just turn to warm. You could also go to the store and get the frozen Crock Pot meals and cook for four hours on low.
get those sausages that are like an inch thick and lock and horse shoe shaped.. (does tht make sense? lol) Get 2 of those and chop them up into one inch pieces. Put them in the crockpot and cover them with 1 bottle of BBQ sauce, 1 small can of tomato paste and about 1 tsp of horseradish sauce, or 2 if you think it's too bland, test it about one hour prior to serving. It makes a thick sausy sausage dish :) Take it all to work, plug it in and let it cook, it'll be ready for lunch at 11:30 and it's oh so yummy.
Something really easy is Little BBQ Winnies, or a chili cheese dip.
Chili Cheese dip
1 pck of Phillie Cream Cheese
1 small can of No bean Hormel Chili
This makes med bowl of dip, serve with Scoops!
You can make A LOT of things.. You can get frozen precooked meatballs add to crockpot with a jar or two of spagetti sauce and bring some rolls for meatball subs....
You can take the same meatballs and add barbecue sauce for an appetizer
You can cook some ground meat/drain and add manwhich and have sloppy joe..
You can take smoked sausage/kielbasa cut it into chunks, add one bottle HEINZ 57 chili sauce/ 1 15 oz. can of crushed pineapple and cook on LOW overnight... Serve with toothpicks...
You can make a pork roast... Buy pork roast cut off fat and brown.. Transfer to crock pot/ add beef broth to cover and cook 8-10 hours on high.. Until tender.. DRAIN and pull with forks until shredded.. Add back to crockpot and add bbq sauce serve on rolls....
I would cook the meal on LOW the night before and use the crock pot to keep it warm/serve. Good luck

Meatballs, they are the best. I don't know exactly what they are called, but they are sweet. They are made with apple jelly and ketchup.
*******EASY CROCK POT LASAGNA
1 pound chuck or 1/2 pound chuck
1/2 pound ground turkey
1 tsp Italian seasoning
1 28 oz jar spaghetti sauce (your favorite)
1/3 cup water
8 lasagna noodles
1 4 1/2 oz can mushrooms
1 15 oz carton ricotta cheese (optional)
2 cups shredded mozzarella cheese
Brown meat and seasoning, drain.
Mix spaghetti sauce and water. Place 4 uncooked noodles in lightly greased crockpot.
Layer with beef mixture, sauce and mushrooms.
Spread evenly with ricotta cheese and sprinkle with 1 cup mozzarella.
Layer with remaining noodles, meat, sauce mixture, mushrooms and mozzarella cheese.
Cover, cook on high 1 hour.
Reduce heat and cook on low 5 hrs.
Yield: 4 servings
I swear this works and in a large crock pot, the cooking time is even slower.
**********3-BEAN HAMBURGER HOT DISH
1 lb. hamburger
3/4 lb. bacon
1/2 c. onion
2 cans Navy beans
1 can chili beans
1 c. ketchup
1/4 c. brown sugar
3 tbsp. vinegar
1 can kidney beans
Brown hamburger and onions; drain. Brown bacon crisp and crumble. Mix together all ingredients. Can be made in a crock pot, cooking for 4 to 9 hours or regular oven for 1 hour.

Ingredients
2 pounds fully cooked frozen meatballs
1 bottle (16-ounce) Catalina salad dressing
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes

Slow Cooker Chipotle-Lime Chicken Thighs Jamaican Rice and Peas
1 cup sliced onion
1 cup chopped celery
1 cup chopped carrots
4 pounds skinless chicken thighs
Salt and freshly ground black pepper
1 (15-ounce) can tomato sauce
1/4 cup lime juice
1 tablespoon minced chipotle chiles in adobo sauce with 1 teaspoon sauce from can
2 cloves garlic, minced
1 avocado, diced
1/4 cup chopped fresh cilantro leaves
Lime wedges, for garnish
Arrange onion, celery and carrots in bottom of slow cooker. Season chicken thighs with salt and pepper and arrange over vegetables.
In a medium bowl, whisk together tomato sauce, lime juice, chipotle chiles with sauce, and garlic. Pour mixture over chicken.
Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours. Serve half of the thighs with this meal (topped with diced avocado and cilantro and garnished with lime wedges) and reserve remaining thighs for another meal.
Jamaican Rice and Peas:
2 cups instant white rice
1 (14-ounce) can coconut milk
1 cup water
1 (15-ounce) can red beans, drained
1 teaspoon dried thyme
1/2 teaspoon finely grated lime zest
1/4 cup chopped scallions
Salt and freshly ground black pepper
In a medium saucepan, combine rice, coconut milk, water, beans, thyme, and lime zest. Set pan over high heat and bring to a simmer. Reduce heat to low, cover and simmer 5 minutes, until liquid is absorbed. Fold in scallions and season to taste with salt and pepper.
