Spice up my mashed potatoes. What would you add that is unique and a surprise at a dinner party?!
Answers: You can add a few slices of beets to the water & cook them w/the potatoes (you can even mash them in after if you want) - your mashed potatoes will be a pretty pinkish purply reddish color!
Mix in cream cheese and chives.
homemade dip. made with velveeta.

Mashed up sweet potatoes with a layer of sour cream between the two.

Seriously, Ranch dressing or maybe some freshly grated cheese.
My family loves my potatoes :-D
Cheese usually goes well with potatoes. Or you could add some cayenne pepper (if everybody likes spicy) or even some yellow curry. Make a small pot and try mixing some yourself in separate dishes to see how they taste.
anchovies

Garlic, Onion, Cheese, Buffalo Sauce, Bacon, Ginger, Turmeric, Wasabi, cream cheese, salsa, sour cream, can't go wrong with cheese (swiss, parm, cheddar, blue cheese, pepperjack!)
any of these i have added, but test it out because I prefer strong flavors. and it depends on what the entre is. take the entre, and mix a favorable flavor that compliments to the potatoes.
a great steak house here in kansas makes a twice baked mashed potatoe, with extra butter, real bacon crumbles, shredded cheddar cheese and parsely on top...layer it with the potatoes, then bacon, then cheese, then parsley..very pretty and good...good luck and merry christmas from kansas
I put whole garlic cloves in with my potatoes while boiling them. I then mash them with the potatoes. I have also added jalapeno peppers to the water. I take them out, but they add heat.
I have used all kinds of herbs, rosemary parsley chives.
I also add cream cheese, goat cheese, gorgonzola, what ever I have on hand.
I have used chicken stock, milk, cream, sour cream.
It all works.
Sprinkle a smoked chipolte on them with some butter if you like hot.
Mix in some italian dressing.
Here are several variations I have used with success:
-Pumpkin and potato mashed together.
-Very finely chopped onion and crumbled crispy bacon.
-Mash the potatoes until really creamy: allow to cool and then pipe into rosettes onto a baking tray lined with baking paper-put into medium/hot oven until browned and crispy on outside. ( In one of my cook books these are referred to as potato castles.) Easy to pre-make and just slide into the oven about 20 minutes before you serve. Do a test run, first though.
-Add some horseradish cream or dijon mustard.
-Roasted garlic and fresh herbs.
-Instead of mashed potatoes, try cooking and mashing some chick peas.
pesto sauce! you won't even need to add anything else such as more fat for flavor
a packet of powdered ranch dip mix. makes really good mashed potatoes
manchego cheese...saw it on Rachel Ray and it was DELISH but if you use a recipe add more cheese than it calls for, the cheese is mild and hard to taste unless you add alot.
I like a bit of asiago cheese, some roasted garlic, along with a few dashes of a good jamaican jerk seasoning (don't go cheap on this, otherwise it's useless--get something reputable with little--if no--salt).
Of course, despite my earlier comment, salt is an absolute must with _all_ potatoes. But add it to your own taste.
There are all kinds of ways to spice up the plain old mashed potatoes. Depending upon what the main dish is here are some suggestions. Try adding a few Tbs of pesto or to make it spicy, add a some horseradish to taste. Also use a fire roasted red pepper puree. These will not only add alot of flavor but will also add a nice bit of color.
