Holiday Breakfast, something I can pop in the oven and have everyone feeling they're getting a special treat!
5 extra-large whole eggs
2 extra-large egg yolks
2 1/2 cups half-and-half
1/3 cup honey
1 1/2 teaspoons pure vanilla extract
2 teaspoons orange zest (2 oranges)
1/2 teaspoon kosher salt
Brioche loaf
1/2 cup golden raisins
Maple syrup, to serve
Preheat the oven to 350 degrees F.
In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, honey, vanilla, orange zest, and salt. Set aside.
Slice the brioche loaf into 6 (1-inch) thick pieces. Lay half brioche slices flat in a 9 by 14 by 2-inch oval baking dish. Spread the raisins on top of the brioche slices, and place the remaining slices on top. Make sure that the raisins are between the layers of brioche or they will burn while baking. Pour the egg mixture over the bread and allow to soak for 15 minutes, pressing down gently.
Bake for 55 to 60 minutes or until the pudding puffs up and the custard is set. Remove from the oven and cool slightly before serving.

I like sausage balls. You mix ground sausage with bisquick, and shredded cheese, roll into balls, place of cookie sheet and bake until done. They are soooooooo good. You can also add some sage and other herbs if you like.

i'm not gonna put another bread pudding recipe but if you want to make it extra festive (the bread pudding that is not the casserole) add some candied red cherries to it. I also would use a vanilla sauce to serve with the pudding instead of maple syrup.
here is a vanilla sauce recipe for bread pudding. i guess this might make it more of a dessert but I don't think I'd like it with maple syrup.
? 1/2 cup Butter
? 1/2 cup sugar
? 1/2 cup firmly packed brown sugar
? 1/2 cup Heavy Whipping Cream
? 1 tablespoon vanilla
1. Combine all sauce ingredients except vanilla in 1-quart saucepan. Cook over medium heat, stirring occasionally, until mixture thickens and comes to a full boil (5 to 8 minutes). Stir in vanilla.
Sausage egg and cheese casserole
? 1 pound bulk pork sausage
? 6 eggs
? 2 cups milk
? 1 teaspoon salt
? 1 teaspoon ground mustard
? 6 slices white bread, cut into 1/2-inch cubes
? 1 cup shredded Cheddar cheese
1. In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Layer bread, then sausage and cheese into a greased 11-in. x 7-in. x 2-in. baking dish, then pour egg mixture over top. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 40 minutes or until a knife inserted near the center comes out clean. You could take out when almost finished and add extra cheese if you want pop back in and melt
This is my favorite trick...it looks and tastes extravagant, but makes use of something we all have in the fridge...eggs, flour, milk and butter.
Heat oven to 425 Degees
put half stick of butter (butter works better than margarine) on a souffle dish or glass pyrex pan (metal cake pan will do). Let it melt while warming up the oven.
Mix thoroughly:
1/2 cup of flour
1/2 cup of milk
2 eggs
Pour batter over melted butter in pan and cook for 20 minutes. This dish rises to the top and looks extravagant, is crispy on teh sides and soft in the middle. You can make it your own and put powdered sugar or cinnimon and syrup, fruit or salsa...in the center. I hope you enjoy!
When we have a lot of guests at the same time, I like to pop a whole fish in the oven stuffed with sliced onions, tomato and sweet chilly peppers, and a pinch of garlic.
This I serve with toast on a platter and each one helps him self...
Fish bakes pretty quick in a hot to medium hot oven.
As long as it is not frozen when you start...
On the other hand...
If your folks do not like fish, try the same with a platter of sausages....
Should work as well....
This time of year I start making this breakfast. We often have it during the Macy's Thanksgiving Day parade to tide us over and again on Christmas Morning. These subtle changes in the classic recipe make a huge difference.
I have a large family so you may need to scale it down.
7 Lg. Eggs
1/4 C Evaporated Milk
1 Tbs. Brown Sugar
1 tsp. Nutmeg
1 tsp. Rum Extract
18 Slices Bread
Beat eggs, milk, sugar nutmeg, and rum extract until completely blended. Dip each side of each slice of bread in the batter. Fry on a heated non-stick pan or griddle until golden on each side.
*Tip*
I heat the oven to 200 deg. and place each finished slice on a cookie sheet in the oven to keep them warm.
Serve warm with butter and maple syrup.

Heat the syrup in a small saucepan over low heat adding rum extract to taste.
Paula Dean has a marvelous french toast with praline topping you make the night before and pop into the oven in the morning. Looks like alot of work but it's NOT! Assemble all and just put it together. I make this alot, even take warm to potluck brunch. oh by the way, she has another also with maple syrup.

1 loaf French bread (13 to 16 ounces)
Butter, for pan
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Raspberry Syrup, recipe follows
Slice French bread into 20 slices, 1-inch thick each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden. Serve with Raspberry Syrup.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Spread over bread as directed above.
Raspberry Syrup:
1 cup raspberry preserves
3 tablespoons water
2 tablespoons raspberry liqueur (recommended: Framboise)
Combine ingredients in a small saucepan and place over medium heat. Stir until warm and thinned out like syrup.
Monkey bread cooked in an angelfood cake pan or bundt pan. You can use Pillsbury dough. It's easy, quick, fun, and filling:
Monkey Bread
4 pkgs. Pillsbury rolls (not buttermilk)
1/2 c. sugar
1/4 c. cinnamon
1/2 lb. butter
2 tbsp. cinnamon
1/4 c. sugar
Separate rolls and cut each into fourths. Combine 1/2 cup sugar and 1/4 cup cinnamon. Roll pieces in this mix. Melt butter and stir in 2 tablespoons cinnamon and 1/4 cup sugar.
Grease Bundt pan. Place half of biscuits in pan, then half of melted mixture, then remaining biscuits and remaining melted mixture. Bake 30 minutes at 350 degrees. Turn over pan and eat while warm. Pull apart with fingers.

Christmas Morning Fritatta:
INGREDIENTS
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
2 tablespoons butter or margarine
1/2 cup chopped tomatoes
1/4 cup minced fresh parsley
5 eggs, lightly beaten
2 cups shredded mozzarella cheese
1/2 cup soft bread crumbs
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS
In a skillet, saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside. In a large bowl, combine the remaining ingredients. Stir in reserved vegetables.
Pour into an ungreased 9-in. pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
Ham and Cheese Breakfast Quiche
Ingredients-
2 (12 ounce) packages frozen hash brown potatoes
1/3 cup butter, melted
1 cup cooked diced ham
1 cup shredded Monterey Jack cheese
2 eggs
1/2 cup heavy whipping cream
Preparation-
Preheat oven to 425 degrees F (220 degrees C).
Squeeze any excess moisture from the potatoes and combine them with the melted butter or margarine in a small bowl. Press this mixture into the bottom and sides of an ungreased 10 inch pie pan.
Bake at 425 degrees F (220 degrees C) for 25 minutes.
Remove pan from oven and arrange the ham and cheese evenly over the potatoes. In a separate small bowl, beat together the eggs and the cream. Pour this over the ham and cheese.
Return pan to oven and bake for 425 degrees F (220 degrees C) for 30 minutes, or until the custard has completely set.
