1/4 cup soy sauce
2 tablespoons Worcestershire sauce
3 tablespoons minced garlic, from jar is fine
1 teaspoon garlic powder
1/2 teaspoon onion powder

Mix all these together and put in frig. for 1/2 hour take out and in a large skillet put a little olive oil in the bottom of the pan. Cook steaks in the pan the way you want.

fry up some fresh sliced potatoes with sauted onions and bell peppers.

STOVE TOP CARIBOU STEAK

1 caribou steak, 1/2 - 3/4 inch thick
3 tbsp. butter
Cayenne pepper
3 tbsp. port wine
1 tbsp. red currant jelly
Salt

Cut steak into pieces about 2 inch square. Salt to taste and place in a skillet with the butter. Brown each side quickly over high heat. Then lower heat, dust the meat with cayenne, add the wine and jelly. Cover and simmer until pink on the inside when cut with a knife.

Flank Steak Tacos
Serves 4

You can also substitute chicken or fish for the steak in these tacos, or make all three for a real feast!

Ingredients8 flour tortillas (8 inches in diameter), heated
1 1/2 pounds beef flank steak, trimmed of fat
2 tablespoons extra virgin olive oil (EVOO)
2 tablespoons ground cumin
1 tablespoon chipotle powder (you can substitute regular chili powder if you don't want it spicy)
2 tablespoons vegetable oil
1/4 head Savoy cabbage, cored and shredded
2 red bell peppers, seeded and sliced
1 small red onion, sliced
Salt and freshly ground pepper, to taste
2 tablespoons hot sauce
2 limes, 1 juiced and 1 cut into wedges
Toppings:

1/2 pound smoked cheddar, shredded
6 scallions, green part sliced on an angle
2 sliced avocados
1 cup sour cream

PreparationPre-heat a grill pan or grill to medium-high.

Pre-heat oven 200°F. Wrap tortillas in a clean, wet, kitchen towel and place in oven to get warm.

Drizzle steak with EVOO.

Season the steak with cumin, chipotle powder, salt and freshly ground black pepper. Place the seasoned flank steak on the grill or grill pan and cook until the meat is well-browned on one side, about five minutes. Turn and continue to cook until well-browned on the other side and medium-rare at the center, about four minutes more. Transfer the steak to a cutting board and let rest for several minutes.

While the steak is cooking, pre-heat a large, nonstick skillet over medium-high heat. Add vegetable oil, about two turns of the pan, and let the oil start to smoke. Add the cabbage, bell peppers and red onions, toss and cook them until the veggies soften and cabbage starts to wilt, about 7-8 minutes. Season the veggie mixture with salt, freshly ground pepper, hot sauce and juice of one lime.

Remove from the heat and keep warm.

Thinly slice the steak across the grain and transfer to a warmed platter along with the spicy veggies. Serve with scallions, avocados, sour cream and lime wedges alongside as your toppers. Top the warm tortillas with a couple of slices of meat, spicy veggies, some smoked cheddar on top and whatever additional toppings you want!

QUICK STEAK WITH GRAVY

1 lb. minute steaks
1 sm. onion, chopped
1/4 c. chopped green pepper
1/2 c. sliced canned mushrooms
1 jar or can brown gravy
1 tbsp. olive oil

Saute onions, green peppers and mushrooms in oil in large skillet until tender. Remove from skillet. Brown minute steaks in skillet; drain any excess fat. Add can or jar of gravy to steaks along with sauteed onions, peppers and mushrooms. Cover, let simmer over medium to low heat for 30 to 45 minutes or until steaks are tender. Serve with rice, noodles or potatoes and tossed salad for a quick, complete meal
