Its OK. If you have any espresso powder add 1 to 2 teaspoons, or a little cold coffee replacing the water. This is good at boosting the chocolate flavor. I use this even when I have vanilla.

Nothing. Vanilla just adds sweetness and flavor. You don't need it. Chocolate stands on it's own!!

it won't taste as rich but try it anyway you'll learn next time then!

Nothing will happen if you leave out the vanilla - the vanilla is there to help bring out a some of the sweetness in the baked goods.

Don't worry about it, I rarely use it when I make brownies. It's just a little bit of extra flavor, but you can't really taste it.

Do you have any other extracts, rum, or whiskey? You can substitute..

Use almond extract, it tastes better than vanilla. If you don't have that, then don't worry about it.
