Question: PINEAPPLE CHICKEN
2 c. sliced raw chicken breasts (1" strips)
18 pineapple cubes, canned
1 whole green pepper, cut into 1" long thin slices
1 c. sliced raw celery
Salt & pepper to taste

SWEET AND SOUR SAUCE
1 c. white vinegar
1 c. apricot nectar
1 c. brown sugar
1 tsp. Worcestershire
1/2 bottle tomato catsup
1 tsp. Cornstarch

Prepare sauce first by combining all ingredients except cornstarch. Simmer for 30 minutes. Thicken with cornstarch diluted in a little water. Saute chicken in a little oil (do not brown) and add all other ingredients and stir constantly. Add sweet and sour sauce, salt and pepper to taste.

CHICKEN PECAN SALAD ON PINEAPPLE RINGS

2 c. cubed cooked chicken
1 c. sliced celery
2 tbsp. chopped pimento
1/2 c. roasted pecans
1/2 c. mayonnaise
2 tsp. lemon juice
Salt and pepper, to taste
4 fresh (or canned and drained) pineapple rings
Crisp salad greens

Combine chicken, celery, pimento, all but 2 tablespoons of the pecans, mayonnaise, and lemon juice. Sprinkle with salt and pepper. Place pineapple on salad greens and top with chicken salad and sprinkle with remaining pecans. Makes 4 servings.

An easy meal to make is simply BBQing chicken breasts, after soaking in pineapple juice and fresh rosemary. Brush the juice and rosemary over the chicken as it cooks (use a little olive oil to get the chicken crispy to begin with).

Serve this with pineapple circles that have been fried in some butter and brown sugar. Care not to burn the brown sugar.

Place on a plate the chicken first, 2 pineapple rings over the top and a green rocket salad on the side.

Take the number of chicken breasts that you plan to prepare and season them to taste. In a hot pan add olive oil and brown the chicken on both sides to seal in the juices. remove from pan. To the pan add whole or canned pineapple, 2 tbles Worcestershire sauce, soya sauce,garlic, onions, and almonds, salt and pepper to taste. Bring contents of pan to a light boil and add the chicken breast back to the pan. cover and simmer for 20 -30 minutes until chicken is cooked through. Remove chicken pieces and set aside. Take 2 tsp of corn starch and add to small amount of water and add to pan and bring to a boil. Prepare rice ahead of time according to the directions and place the chicken breasts on top of the rice. When sauce has thickened pour over chicken and rice and sprinkle with chives and parsley.
