Can I let dough sit in refrigerator overnight?!


Question: I want to make a dough with yeast and sugar in it. Can I mix it and put in in the refrigerator overnight and let it rise the next day or can I let it rise and then refrigerate it overnight and use the next day. We have always mixed our dough, kneaded it and then covered it and let it rise and baked it th e same day.

If you usually let the dough rise in a warm place, you can put the dough into the fridge overnight. I have a recipe for bread that can be done in 2 ways: either with 2-3 hours of rising in a warm place or with 8-12 hours of rising in the fridge. Both ways it comes out very nice. Just be wary, not all yeast will work well with this method, so it is trial and error.

Yes you can. Personally I would let it rise then proof it and let it rest on the fridge overnight. This will help the dough be more manageable when you use it the next day.
