I thought about this one...no substitute. Depends on what you are making. You could maybe switch to Almond, Vanilla, Orange, spearmint but that would be hard to find as well, and you might consider Rum essence.

Since your recipe uses 1-1/2 teaspoons vanilla and 1/4 teaspoon of peppermint, I would leave the peppermint out as 1/4 teaspoon it not a whole lot in a batch of cupcakes. I would suggest you buy a package of peppermints put them in a plastic baggie & crush them & sprinkle them over your icing.

I thought for a little minute about creme de menthe but that would cost quite a bit for a bottle and 1/4 teaspoon in your batter would never be noticed or tasted.

Thank you. I didn't mention candycanes but that is what my grandchildren like either on cake, cupcakes or iced cookies. Report It

  • You could use any other extract you'd like, such as almond, however then your cupcakes will taste like whatever extract you use.

You can always use Creme de Menthe in place of peppermint extract.

Yes,Cream De Menth, clear or if the color dosen't bother you green.

try mint extract...I'm not being mean, lol...I'm suggesting something different. Peppermint extract is made from the variety of mint plant called 'peppermint', while the plain 'mint extract' has a slightly different flavor, made from spearmint/a blend of mints. If your parents have creme de menthe on hand (sry don't know your age, but it's a recipe from seventeen mag) you would need to add about one Tablespoon, as the flavor is much weaker than extract. If you can't find any of the above, just make the recipe without any mint. It won't be chocolate peppermint cupcakes though, just chocolate cupcakes...but who ever found something wrong with "just" chocolate :)

I just went back to re-read the recipe and it seems severely off balance! I've never seen a recipe call for 1 1/2 cups flour and 5 cups cocoa! I've had many years experience baking and think there is a typo in that recipe. I think they meant to say 5 Tablespoons cocoa, or if you want a darker chocolate cake, try using 1/2 cup to 2/3 cup cocoa, in proportion to the flour called for.

    Good luck!!
