Any body got any good easy chicken recipes?!


Question: Cut a whole chicken into pieces. Sprinkle italian seasoning, salt and pepper and bake for 40 minutes. Pour on a bottle of spaghetti sauce and sprinkle wih parmesan cheese. Bake for 15 minutes more. Boil spaghetti and put the chicken on top- you may need some extra sauce depending on how you like it. Serve with garlic bread

Baby lima bean and chicken soup
Put two chicken leg quarters (skin and all) into a pot with two quarts of water. Simmer about an hour. Remove chicken to a cutting board to cool and add a one pound bag of dried baby lima beans, a sliced onion (or two), a teaspoon of salt, a chicken bouillon cube (or two) and about a pinch each of savory and rosemary (optional) to the pot. Bone and shred the chicken leg quarters and return chicken to the pot. If you do not like chicken skin, remove it after cooking and before deboning the chicken. Cook about two hours until the baby limas start to fall apart.

Yes! I just tried this new recipe and I thought I wasn't going to like it... especially because I'm not a big fan of peaches... but it has turned into my favorite chicken recipe because it is so fast, easy, good, and healthy.

Brown 3-4 pieces of chicken breast in a medium sized pan... add one can of peaches, let it sit for a few minutes, and then add one can of salsa (we like the mild salsa). Wait until it gets hot and serve over some white rice.

Well now I think all chicken recipes are easy - but I don't cut & paste every recipe out there.

Easiest I guess would be BBQ because I wouldn't be doing it my husband would be out there with his buddies having a beer.

Next easiest would be using Shake& Bake. Fast, easy & tasty

My favourite is to make Chicken Kiev when I have the time and freeze it to take out & defrost as many pieces as I need for the number of guests I expect. And it's simple as well as easy and when I have the time but it is truly great to get the benefit of a really great meal when I don't have the time..

Buy chicken breasts where they are on sale. Slice them about 1/4 to 1/2 inch thick and put each slice - you can do two at a time - between wax paper or cling foil or a big bag -
Flatten them out just a little pounding. Put a pat of butter in the middle along with parsley (whatever kind you like). Roll them up and secure with toothpicks. Put 3 plates out; one with flour, one with switched eggs, one with breadcrumbs (whatever kind you like). Dip the chicken into the flour and shake off the excess, then dip into to egg, next completely coat in the breadcrumbs. You can repeat that process if you want - I do. Freeze and remove from the freezer to defrost in the fridge the night before you plan to serve. Saute in large frying pan (electric pan is good here) until the breading is lightly golden brown - will take 3 - 5 minutes on 350F then transfer to oven for another 8 -10 minutes until the chicken is fully cooked.

Just remember to turn the oven on to preheat. @ 350F

Serve whatever pleases you with it.

I serve a green salad, then the chicken with either mashed potatoes & gravy or egg noodles buttered, always green beans or asparagus if it's in season. Fresh fragrant bread is a must in our house.

Bake you chicken in deep pan covered. take out of pan and add rice, chicken broth, mixed veges and butter. then put chicken on top and cover and bake until rice is done. don't forget to measure your rice and broth.
