What is a good christmas dinner to make?!
Answers: besides turkey, ham and tamallies? something good for the family and something the kids will enjoy! the only reason for no turkey is because it kinda get tiring after thanksgiving and most of the people that are going to be here dont like ham and im not into making tamallies! can anyone give me recipes? deserts would work wonders to!

We are having roast beef, mashed potatoes and gravy, green bean casserole, a fruit salad, rolls and dessert.
buy the tamales. there are tons of mexican grocery stores that sell them. lasagne is good / can be made ahead of time. make one pan or red with meat and one pan white sauce with just vegies / no meat. or maybe a prime rib roast. baked potato bar. let everyone make their own / choose their toppings. desserts: cookies , we buy a yule log cake at the bakery .
Roast Beef has been popular at our house. Roast Beef with some usual Thanksgiving sides like mashed potatoes and gravy, yams, green bean casserole, then make custard to drink and lots of appetizers so people can graze....
I never serve turkey on Christmas. It's usually beef or pork (not ham).

PERFECT PRIME RIB
Any size prime rib roast, room temperature
Garlic clove
Sesame oil
Salt and pepper
Preheat oven to 375 degrees. Rub roast all over with cut garlic cloves. Rub with sesame oil. Season with salt and pepper. Place roast on rack in middle of oven. Roast 1 hour. Turn oven off. Do not open oven at any time. May be held in oven for several hours. Turn oven on again to 375 degrees for 30 minutes before serving for rare, 40 minutes for medium rare. Works for any size prime rib roast. Ask butcher for a roast to serve the number of guests.

I have a roast beef recipe that cooks in the crock pot. It takes about 15 min to throw in the pot and another 15 or 20 to get to the table so on a busy holiday it's perfect.
Perfect Roast Beef and Potatoes
1 roast - sirloin, tri-tip, chuck or whichever cut you prefer
6-7 russet potatoes
2 med onion
1 Tbls Schilling Montreal Steak seasoning, divided
1 cp water
Scrub the potatoes or peel them if you prefer, cut them lengthwise into quarters. Slice the onion, set aside 5 good slices and layer the rest with the potatoes in the bottom of the crock pot. Pour in 1 cp of water and then sprinkle all with 1 tsp of the Montreal Steak seasoning.
Rub the roast with the other 2 tsp of seasoning and place it on top of the potatoes. The fatty side of the roast should be up so that the juices and flavor season everything below as it cooks. (Do not trim the fat, it will contribute to a dry, tough roast.) Stick the reserved onion slices down each side of the roast so it's surrounded. Put the lid on and cook on low for 12-20 hours. Yes 20 hrs, I usually get this started one night before bed and then we have it for dinner the next night.
To serve, remove the roast to a serving plate. Scoop the potatoes and onion to a bowl with a slotted spoon. I love the beef juices just as they are but you can add a couple of tsps of flour and cook on high for 10-15 min to thicken to a gravy consistency.
Cooking so long makes the roast so tender and juicy that it's spoiled me for roast cooked any other way. The potatoes are infused with the beef flavor and are delicious. Put them on your plate, mash them slightly with a fork and spoon a bit of the beef juices over them (or gravy if you prefer).

I always cook Italian food. I grew up on homemade sauce and I make it. I make eggplant ( sometimes) stuffed shells, and lasagne.
ROCK SALT PRIME RIB
rock salt
prime rib roast
? cup water
Preheat oven to 500 degrees F. Line a roasting pan with foil and cover bottom of pan with rock salt. Place roast in pan and cover completely with rock salt, pressing salt into roast. Sprinkle with water. Roast uncovered 12 minutes per pound. Remove from oven. Hammer off rock salt and serve.
