Chocolate Lover's Waffles

2 large eggs, separated
1 1/2 cups milk
1 cup all-purpose flour
1 tablespoon unsweetened baking cocoa
2 teaspoons baking powder
1/2 cup unsalted butter, melted and cooled slightly
1/2 teaspoon vanilla extract
Preheat waffle iron according to manufacturer's directions.
Beat egg whites in a small mixing bowl until soft peaks form; do not overbeat.
Combine yolks, milk, flour, cocoa, baking powder, butter and vanilla in a large bowl; mix until smooth. Gently fold in 1/3 of the egg whites. When combined, fold in remaining egg whites. Lightly coat waffle iron with vegetable cooking spray (if not a nonstick surface). Cook waffles according to manufacturer's directions. Waffles should be lightly browned and thoroughly cooked. Serve immediately, topped with chocolate chips, whipped cream and additional cocoa, if desired.

I love chocolate too, and waffles! For an easy fix of both sprinkle chocolate chips into the batter once you have placed it in the waffle iron, but before the waffle is cooked. I usually push the chips into the batter so that the chocolate doesn't stick to the iron and burn. When the waffles are done they are crispy on the outside, fluffy on the inside, and hold little gooey pockets of chocolaty goodness! Enjoy your Christmas breakfast, happy holidays!!

2 cups all purpose flour

2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
4 tablespoons vegetable oil
1/2 cup small chocolate chips
1 1/4 cups milk
Makes about 6 waffles
1. Combine all dry ingredients in a large bowl. Stir to blend well.
2. Add the eggs and oil then slowly pour in the milk while stirring constantly with a rubber spatula. Add just enough milk to make a batter which mounds slightly when poured. Stir in the chocolate chips and blend to distribute them evenly.
3. Preheat the Waffle Pro? at: ?Crisp Exterior/Moist Interior? @ Color Control 3 or ?Uniform Texture? @ Color Control 2 1/2.
4. Spoon a generous 1/3 cup waffle batter onto preheated waffle grid. Close the lid and bake until signal indicates waffle is done.
5. Remove waffle and place on a wire rack to cool for about 30 seconds then serve immediately.
6. This batter may leave some melted chocolate on the waffle grids. To clean, let the Waffle Pro? cool and wipe off chocolate with a warm moist cloth.Note: Waffles may be kept in a preheated 300°F oven for 5 to 10 minutes but their consistency may change. For a lighter waffle, the eggs in this recipe can be separated and the yolks added to the batter along with the milk. The whites can be beaten stiff, then folded into the batter.
