Does this sound like to much corn starch for a shortbread cookie recipe?!

Question: 1 cup butter
1/2 cup sugar
1 tsp vanilla
2 cups flour
1/4 cup corn starch

Answers: 1 cup butter
1/2 cup sugar
1 tsp vanilla
2 cups flour
1/4 cup corn starch

No, it sounds right. Cook's Illustrated (my favorite recipe source) calls for 1/4 cup of cornstarch (or better, rice flour) for 1 3/4 cups flour. Using cornstarch or rice flour will cut the amount of protein in the flour, and therefore the amount of gluten formed, which makes a more tender cookie.

Yeah

It kind of does....?

No, mine calls for 3 cups of flour and half a cup of corn starch.

Not really. But you can cut it back a little.

Some recipes use cornstarch in place of some of the flour. 2 cups of flour is not all that much so the cornstarch amount is
right. Not all shortbread cookies recipes use cornstarch but some do. It changes the texture a bit.
