when i make pasta dishes, i make them because the quick and easy. put away your measuring spoons and try this.

throw some smashed garlic and onion into a pan with good olive oil. when transparent, throw in whatever seafood you have in bite size chunks. sprinkle with Italian herbs (dried is OK) like oregano, basil, parsley. throw in some white wine (whats left over in your glass after helping yourself). cover and turn down the heat for three or four minutes. salt and pepper and put over pasta in a bowl to keep all those great flavors. top with parm and who-la!

Both of the below recipes can substitute shellfish or pasta type- shrimp, scallops, crab, or even salmon would all work in either.

Seafood Alfredo
3 oz (100g) butter
1 small clove garlic, peeled and crushed
1/4 pint(150 ml) double (heavy) cream
3 oz (80g)freshly grated parmesan cheese
6 oz (150g) peeled cooked shrimp
8 scallops - cleaned and sliced in half
1lb (450g) fettucine
Melt half the butter in a frying pan and lightly cook the garlic, until softened. Add the scallops and cook until firm - then add the shrimp and heat through.
Remove and keep warm whilst you make the rest of the alfredo sauce.
Melt the rest of the butter over a low heat. Remove the pan from the heat and stir in the cream and cheese.
Return to a low heat and do not allow the mixture to boil - it will separate - stir until it's thickened and then add the scallops and prawns to the cream mixture.
Reheat very gently and pour over freshly boiled fettucine.


Pesto Seafood Pasta
1/4 cup plus 1 tablespoon olive oil, divided
1 cup loosely packed fresh basil leaves
1 cup loosely packed fresh oregano leaves
2 tablespoons minced fresh parsley
4 to 6 garlic cloves, divided
12 ounces uncooked linguine
2 green onions, chopped
1 tablespoon butter
1/2 pound uncooked medium shrimp, peeled and deveined
1/4 cup white wine or chicken broth
1 tablespoon lemon juice
1/4 teaspoon cayenne pepper
1/2 pound fresh sea scallops
1/2 cup grated Parmesan cheese

For pesto, place 1/4 cup oil, basil, oregano, parsley and one garlic clove in a blender or food processor. Cover and process until smooth; set aside. Mince the remaining garlic. Cook pasta according to package directions.
Meanwhile, in a nonstick skillet, saute onions and minced garlic in butter and remaining oil until tender. Add the shrimp, wine or broth, lemon juice and cayenne; saute for 2 minutes. Add scallops; saute for 2 minutes or until shrimp turn pink and scallops are firm and opaque. Drain pasta; toss with pesto and Parmesan. Top with seafood mixture. Yield: 8 servings.

This is actually VERY simple. It' just looks long. This is one of my favorites.

SHRIMP & ANGEL HAIR PASTA IN PEANUT SAUCE
(This is a very simple, full of flavor dish. It presents very well for company, served with steamed broccoli and a nice salad. The broccoli can be served as a side dish or tossed in with the shrimp and served with the pasta.)

SHRIMP
● Fresh large or jumbo shrimp (enough for no. of people serving)
● juice of one lemon wedge (for shrimp)
● cloves fresh crushed garlic
● 2 tblsp canola oil

● on med. high to med. heat, sauté shrimp with lemon, 1 clove crushed garlic and herbs. Keep mixture moving so as not to burn garlic, turn shrimp to brown on both sides. Just before done, add wine or vermouth. Stir well and remove from heat and set aside.

SAUCE
● rice vinegar (or cider vinegar)
● lemon (or lime) juice, & lemon or lime wedge
● ? cup white wine (or dry vermouth)
● 2 tblsp canola oil
● 2 tblsp. natural peanut butter (approx per serving)
● water for sauce consistency
● dried herbs (tarragon, basil (or chopped fresh herbs)
● chopped fresh flat leaf parsley
● steamed fresh broccoli (for side dish or toss with shrimp and pasta
● angel hair pasta

● Cook angel hair pasta
● Steam fresh broccoli florettes and toss in
● n small sauce pan over Med – med/low heat, mix peanut butter, few tblsp. vinegar, herbs, 2 cloves crushed garlic, fresh juice from wedge of lime or lemon
● add water (start with about ? cup, then add tblsp. at a time for desired consistency. Peanut butter serves as quite a thickener so don’t hesitate to add more water if needed). Mix well.
● Pour mixture over pasta, add shrimp and broccoli and toss gently
● Place each serving on plate and sprinkle fresh chopped parsley over each

SHRIMP & ANGEL HAIR PASTA WITH GARLIC AND CHEESE

If you don't care for peanut sauce, try just cooking up the shrimp as above. Add to cooked angel hair pasta, adding a little more oil, oregano, basil, parsley, crushed fresh garlic. Toss well and add shrimp.

How about Shrimp Scampi over linguine - one of my favorites!

Linguine with Shrimp Scampi
Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.

Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Cold Recipe

One box medium pasta shells/or corkscrew(multi colored)
One green pepper
One red pepper
Chopped red onion, your discretion
Cherry tomatoes, halved or whole, your discretion
Shredded carrot
One bottle of Italian salad dressing
You can add 1/2 cup of Miracle Whip, your discretion

Cook pasta according to box/bag. Chop up all veggies. Add crabmeat and/or shrimp. Toss with Italian dressing. You can add parmesan cheese or mix other shredded cheese in. Chill for a couple hours. I recommend waiting for the salad to chill before adding cheese.
