Baking ingredient question, whats the difference between caster sugar and white sugar?!

Being a former chef and familiar with the UK terms for foods, castor sugar is a bit finer than regular white sugar, in the US and Canada, it is known a fruit sugar, it dissolves faster and is nicer for things like meringue's, cakes and desserts.

They di have regular sugar in the UK, and will call dark brown sugar "muscavado" it is the area that it is originally from. So if you have a recipe of UK origin there are ingredients in other countrys you just have to discipher the lingo.

caster sugar in the US is the superfine granulated sugar...it's just the size of granules that makes the difference

Caster sugar is a finer grained sugar often used by professional bakers. Same sweetening power as regular.
