La Bonne Table's Party Hot Chocolate/Cocoa
Makes 1 gallon
1 gallon whole milk
1 cup chopped semi-sweet dark chocolate OR ? cup unsweetened cocoa
1 cup succanat
1 teaspoon of vanilla extract or 1 vanilla bean
1 pinch of salt
dash of cardamom or saffron
How you make it:
Heat milk (if using vanilla bean, add bean during the heating process) and simmer. Add chocolate pieces and succanat and whisk to blend. Check for taste and add more sugar or chocolate if desired. Add salt, and cardamom or saffron. Remove vanilla bean before serving. (If using vanilla extract, add before serving)
NOTE: If using cocoa powder, whisk into the milk BEFORE you heat the milk for easier solubility.
3 Delicious Hot Cocoa Recipes:
For the White Wocoa
16 ounces white chocolate, finely chopped
4 cups whole milk
1/2 cup heavy cream
3-4 pinches white pepper
8 large marshmallows, to garnish
For the White Raspberry Cocoa
16 ounces white chocolate, finely chopped
4 cups whole milk
1/2 cup heavy cream
3-4 pinches white pepper
1 cup raspberries, pureed in blender
1/2-1 cup whipped cream, to garnish
1/4 cup chocolate shavings, to garnish
For the Spicy Dark Cocoa
12 ounces bittersweet chocolate, finely chopped
4 cups skim milk
1/2 cup cocoa powder
1/4 cup granulated sugar
1/2-1 teaspoon dried ancho chile powder
1/2 teaspoon cocoa, to garnish
1/2 teaspoon chili powder, to garnish
How you make them:
White Cocoa: put chopped white chocolate in a bowl. Set aside.
Combine milk, cream and pepper in a medium saucepan. Place over medium heat, stirring occasionally. Heat until it starts to simmer; don't let it boil!
Pour heated mixture over white chocolate, let sit 1 minute, then mix with a whisk until all of the chocolate is melted.
Ladle cocoa into mugs. Garnish each one with 2 marshmallows.
White Raspberry Cocoa: Repeat steps 1-3 from white chocolate.
Add pureed raspberries into mixture and whisk until well blended.
Return to saucepan. Reheat on low until hot to the taste.
Ladle into mugs, then garnish with whipped cream and chocolate shavings.
For the Spicy Dark Cocoa: put chocolate in a large bowl and set aside. Pour milk into a medium saucepan and heat on medium-low setting.
In a small bowl, stir cocoa powder and sugar together. Add to milk. Whisk over heat until well blended. When milk is hot, pour over the chocolate.
Let sit 1 minute. Whisk until chocolate is melted and blended. Stir in pinch of chili powder. Taste. Add a pinch at a time until spicy enough.
Fill mugs. Mix garnish coca and chili powder, then sprinkle of top.
Gracie, this next hot cocoa mix will be great for grandpa! It's called:
Diabetic Hot Cocoa:
1/2 cup nonfat dry milk powder
1-2 tablespoon sugar
1 1/2 tablespoons baking cocoa
1 cup water, boiling
2 tablespoons whipped cream
How you make it:
Add dry milk, sugar, and cocoa in a mug.
Stir in water.
Top with whipped cream.
Hershey's Hot Cocoa:
1/2 cup sugar
1/3 cup cocoa powder
1/3 cup water
4 cups milk
1 teaspoon vanilla
How you make it:
Stir cocoa powder and sugar in a pot.
Add water and stir.
Bring to a boil over medium heat. Boil two minutes.
Add milk (I use 1 can canned milk and equal water, plus 1 cup of whole milk). Heat until hot.
Add vanilla and serve.
Hot Cocoa Loco:
1 cup nonfat dry milk powder
1/3 cup sugar
1/4 cup unsweetened cocoa
1/4 cup non-dairy powdered coffee creamer
1 dash salt
5 cups water
1 teaspoon vanilla extract
1/2 cup rum
1/2 cup Creme de Cacao
Whipped Cream and
Chocolate Shavings for garnish (optional)
How you make it:
In a large bowl, combine the dry milk.
sugar, cocoa, creamer, and salt, mix well then set aside.
In a large saucepan, bring the water to a boil high heat.
Remove from the heat then add the vanilla; stir in the reserved dry mixture until well combined.
Add the rum and creme de cocoa; mix well and serve in mugs or heat-proof stemmed glasses. Add whipped cream and chocolate shavings to garnish.
Mexican Hot Cocoa:
1 tablespoon unsweetened cocoa powder
2 teaspoons dark brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon boiling water
1 cup 1% low-fat milk
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
How you make it:
Mix first 4 items together, in a good sized mug.
Add boiling water, stir till smooth.
Heat milk for 3 minutes over LOW heat until hot.
Stir the milk into the cocoa mixture until well mixed.
Stir in vanilla and almond extracts.
Enjoy--.
Extra Chocolatey Hot Cocoa:
1/3 cup milk chocolate chips
1/4 teaspoon vanilla extract
1 teaspoon butter
1 cup half-and-half
How you make it:
Combine chocolate chips, butter and vanilla in the top of a double boiler over low heat until melted and smooth.
Slowly add half-and-half, blending into chocolate mixture.
Heat through, but do not boil.
Peppermint Hot Cocoa:
3 peppermint stick candy (4 1/2")
1 cup confectioners' sugar
1 cup non-dairy powdered coffee creamer
3/4 cup unsweetened cocoa
chocolate shavings for garnish (optional)
whipped cream
How you make it:
Place peppermint crushed sticks in a food processor till fine powder.
Add with sugar, creamer and cocoa.
Pulse till mixed.
Add 1/4 cup mix to 3/4 cup boiling water for each serving.
If you like serve with chocolate shavings and top with whipped cream.
Peppermint Patty Hot Cocoa:
2 peppermint patties
1 cup milk
1 teaspoon cocoa powder
1 teaspoon sugar (optional)
How you make it:
Chop the peppermint patties into small pieces and combine all ingredients in a pan.
Heat over medium heat until all ingredients are incorporated and milk is hot.
Can be served with whipped cream and some grated chocolate.
Hot Schnnocolate:
8 ounces whipping cream
1 tablespoon sugar
32 ounces hot cocoa
4 ounces peppermint schnapps
cocktail cherries
How you make it:
Beat whipping cream, while adding sugar slowly, until it forms peaks.
Set aside.
Prepare hot chocolate according to directions.
Add peppermint schnapps and stir.
Pour into individual glasses or mugs and top with whipped cream and a cherry.
Other ideas: serve with a peppermint stick; sprinkle whipping cream with cocoa or candied sprinkles; decorate whipping cream with a few gold sprinkles for a festive look.
White Hot Chocolate:
1 1/4 cups 1% low-fat milk
1/3 cup white chocolate
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon real vanilla extract
How you make it:
Put about half of milk in a small pot.
Add other ingredients and stir often.
Bring almost to a boil.
Chocolate should be melted.
Add remaining milk to pan, and stir for about 30 seconds.
Remove from heat.
Serve with a dusting of cinnamon and a dusting of fine dark chocolate shavings.

Try adding a little cinnamon
Mexican hot chocolate
4 ounces unsweetened chocolate
4 cups milk
2 cups heavy cream
3/4 cup sugar
1 1/2 teaspoons cinnamon
2 eggs
3 teaspoons pure vanilla extract
Melt the chocolate in the top of a double boiler. In a separate heavy saucepan heat the milk and cream on low until hot but not bubbling. When the milk mixture is hot add 3 tablespoons of it to the chocolate and mix well. Blend in the rest of the milk mixture, the sugar, and the cinnamon. In a small bowl beat the eggs and vanilla. Add a tablespoon of the chocolate mixture to the eggs and beat well. Slowly stir the egg mixture into the chocolate. Whisk the hot chocolate briskly in the double boiler for 3 minutes, then serve immediately.
Makes 8 servings.
A dollop of marshmallow creme and a pinch of cinnamin or nutmeg on top. Possibly a cinnamin stick stirer.
Put a shot of Kalua in your cup. Delicious.
use a Cinnamon stick to stir it, or put a dash of ground Cinnamon in.
A dash of nutmeg is nice to easy though it is a strong spice.
Add half a cup of black coffee, or indulge with some rich cream, or your favorite coffee or chocolate flavoured booze if you are so inclined.
Add a pinch of cayenne pepper and cinnamon to your hot cocoa recipe/mix OR put a candy cane in the cup as a "stirrer" it will add a nice peppermint taste.
Spicy hot chocolate~ (serves 4)
Ingredients:
3 cups milk
1/4 cup cocoa powder
1/4 cup sugar
1 teaspoon ground cinnamon
1 pinch ground cayenne pepper (more if you like the heat)
Directions:
Warm the milk in a saucepan, then pour it into a blender.
Add the cocoa, sugar, ground cinnamon and ground cayenne. Blend until frothy/foamy looking
Whip Cream
&When it's very hot, throw in a hershey bar and it'll melt inside.
If you use a mix like Swiss Miss, try adding a splash of half and half after you've m ixed it w/ water. Makes it creamy! And a spoonful of malted milk powder is good in any mug of hot chocolate, too. Don't forget to stir it w/ a peppermint stick that you can nibble as you drink!
Gourmet Hot Chocolate Mix
1 25-oz. box non-fat dry milk
1 16-oz. jar non-dairy creamer
1 15- or 16-oz. container Nestle' Quik
1 13-oz. jar malted milk powder
1 cup powdered sugar
1 cup Ghirardelli Sweet Ground Chocolate and Cocoa
Mix all of the ingredients in a very large container. Use a wire whisk to be sure it is distributed evenly. Divide mixture into jars with tight lids.
To make hot cocoa: place 2 to 3 Tablespoons of mix into a mug. Add boiling water (or hot milk for richer cocoa) and stir well. You may use more or less mix to taste or depending on the size of the mug.

1 (14 oz) can sweetened condensed milk
? cup unsweetened cocoa

Mini Marshmallows (optional)
In a large saucepan, combine sweetened condensed milk, cocoa, vanilla and salt; mix well. Over medium heat, slowly stir in water; heat through, stirring occasionally. DO NOT BOIL. Top with marshmallows, if desired.
Tip: Chocolate can be stored in the refrigerator up to 5 days. Mix well and reheat before serving.

I put the flavored coffee creamer in my hot chocolate. The amaretto flavoring is my favorite.
Drop a few cloves in the cup along with a shot of Baileys. Also, a splash of dark rum adds spice to the whole evening!
