I am making baked chicken tomorrow, what is a good recipe?!
Answers: I like to BBQ my chicken, I use the crock pot, I put my boneless, skinless chicken in the crockpot, and put my BBQ sauce in and slow cook it all day, half way hrough, I pour that sauce off, and add new, that way all the fat from the chicken will be gone, its really good, and healthy
EASY BAKED PEPPER CHICKEN
6 uncooked chicken breasts
2 cups onions and peppers (thinly sliced)
2 tsp pepper
2 tsp basil seasoning
1/4 cup olive oil, separated in 1/8 cups
Preheat the oven to 350 degrees. Line a deep baking pan (9x13) with foil (this will reduce clean-up time) and seal the heat. Drizzle the foil layer with olive oil to avoid sticking Sprinkle foil with some of the pepper and basil Lay the chicken breasts on the oil-seasoning mixture, spread out, and drizzle lightly with olive oil. Use a brush or spoon to distribute the oil evenly on top of the chicken Sprinkle the chicken with remaining seasoning, to taste Sprinkle the chicken with the onions and peppers.
Important: Cover the pan with another layer of foil, and seal the sides. Bake for 30-45 minutes, or until the center of the chicken is no longer pink.
It'll be the juiciest, most tender baked chicken you've ever had - no need for a knife. Best over rice and sauteed vegetables.
Filling the cavity with a good stuffing greatly adds to the flavor, believe it or not. Then, rub the skin with butter (not margerine, which isn't really food anyway) and then sprinkle on seasonings, like sage, garlic, pepper, paprika, and anything else you like that looks good to you. Cover the pan with tin foil and bake at 350 for 2 or 3 hours, depending on the size of the bird. (Usually until the legs look ready to fall off.) Take off the foil and bake for an additional 10 minutes, until the skin turns a crispy brown. (My family loves this recipe.)
u got two good answers already...so,i just want to give u another idea for chicken...not baked though:)..unless u already know it...well,first cut the chicken into equal small slices,boil them,when they're done,cut similar slices of green/red/yellow sweet peppers and onions...fry everything in a suitable sized pan,using butter and some oil so the butter wouldn't burn since it has short heat tolerance,adding some salt,black pepper and some herbs-according to ur liking-and that will be it...i hope u like it.....enjoy:)
Brine it in orange juice and brown sugar, truss it, stuff it with herbs, and bake at 350 for about two hours.
Don't put stuffing in the bird, because poultry juices + stuffing = possible salmonella epidemic. That is, unless you like cooking the exact center of your bird to 180 degrees.
Steam baked lemon chicken.
Put the chicken on a wire rack in a roasting tin so that the chicken is raised from the tin and sits on a draining rack. (I use the rack from the grill pan)
Heat the oven to about 170 degrees (gas mark 5 or 6)
Put about 2 cups of water in the baking tray with some lemon juice (and some herbs like thyme or parsley if you want them)
Now make a few holes in the chicken with a knife and pour some lemon juice over the top. Then cover the top of the chicken with some slices of lemon.
Bake the chicken as usual - just make sure the water doesn't all evaporate - top it up if you need to.
The chicken bakes but never becomes dry because the steam from the water keeps it really moist. the whole thing tastes very slightly of lemons. If you want it to taste strongly of lemons, push the lemon slices under the skin of the chicken.
It's so tender and juicy and it's as easy as anything!

Hi Gary...... when I make baked chicken I place the peices in a 9x12 glass baking dish shin side up.... salt,pepper, i put about 1/2 cup of white wine with a little garlic and onion bake at 375..... if someone allowed emails on here i could send him more info ...hint hint...lol
