Question: Hominy Casserole
2 cans yellow hominy
1 chopped onion
1 chopped bell pepper
1 can cream of mushroom soup
1 sm. jar Cheez Whiz with hot peppers
3/4 c. crushed corn chips
Mix mushroom soup and Cheez Whiz in small bowl and set aside. Place hominy, pepper and onion in small greased casserole dish; pour soup mixture over top. Sprinkle with crushed corn chips. Bake at 350 degrees for 30 minutes.

SPICEY HOMINY CASSEROLE

4 slices bacon
1 green pepper, chopped
1 (29 oz.) can hominy
1 tsp. Worcestershire sauce
1 c. shredded cheese
Salt and pepper to taste
2 lg. onions
1 (4 oz.) can sliced mushrooms, drained
1 (10 oz.) can Rotel tomatoes

Cook bacon until crisp. Drain and save. Add onion and pepper to drippings in skillet. Saute until tender; stir in other ingredients except bacon and cheese. Cook 20 to 30 minutes and stir in crumbled bacon, put in 2 quart casserole and sprinkle cheese on top. Bake 20 minutes at 350 degrees.

I made one once with a can of white hominy which I drained and put into the blender, mixed with 3 whole eggs, salt and pepper, and some onion and cheddar cheese and chives, enough milk to make it right ......baked it in the oven

Hominy Casserole

2 (14 ounce) cans yellow hominy, drained
1 cup grated cheddar cheese
1 (4 ounce) can chopped green chilies, drained
1 (8 ounce) carton sour cream
1 small onion, chopped
salt, to taste
pepper, to taste


1. Mix all ingredients except the cheese.
2. Pour into 8 or 9" baking dish.
3. Sprinkle grated cheddar cheese on top.
4. Bake at 350 degrees for 25 minutes or until cheese is thoroughly melted and sides of casserole are bubbling.
