Am I destined to eat pie with a spoon forever?!


Question: Serious question. I like pie. I like to make my own pie at home, rather than get it at a restaurant. HOWEVER, when I make my pies and slice them, then put them on a plate, they do NOT look like pie slices are supposed to look! They look like a big pile of smoosh! Is this just a matter of chilling them BEFORE I slice them and put them on my plate? -- because I like warm pie better than cold.
And now I feel stupid, because I am one of the few men that actually doesn't get lost in the kitchen.

It depends on how long you cook them for, but it's usually best to chill pies for a little while (particularly berry or custard pies) before serving them. Otherwise they filling doesn't coalesce and just leaks out of the pie in a big pile.

If you are talking fruit pies, do you put a thickener in when you're boiling the fruit, like corn starch or arrowroot flour?
