I'm not sure that I've ever met a potato that I didn't like. I make a pretty mean garlic mashed potato that will clog your arteries just thinking about it.

It involves two pounds of red and yellow creamers, 3 BULBS of roasted garlic, 1 stick of butter, 1 cup of heavy whipping cream, chopped chives and salt and white pepper to taste.

I guarantee that no gravy is needed.

HMMMMMM.... Potatoes! I would eat them any way they were made. I love them. I call my kids my "Little Potatoes" because I love them so much- Ha!

I love potatoes, BUT my favorite is Scalloped!! The easiest recipe I have for them is this:

5-6 potatoes, thinly sliced
Ham, (leftovers from Christmas Day are perfect) cut into small pieces.
1 small onion, sliced very thin.
1 small jar roasted red peppers chopped into small pieces(optional)
1 jar of Classico Alfredo Sauce. (or your favorite Alfredo sauce)
Half stick of butter, sliced into "dabs"
Milk
Fresh cracked pepper and salt
Cayenne (for a little kick)

Layer the potatoes, ham, onions, peppers and "dabs" of butter in a small baking dish or oven proof casserole dish. Pour the jar of sauce over the top. Add milk to the jar (about a 1/3 of the jar) and shake well to get all the sauce out. Pour this over the potatoes. Add more milk if you have to. You want the liquid about 2/3 up the side of the dish. Salt and Pepper the top, add your dash of cayenne. Cover with aluminum foil and bake at *375 for 50 - 60 min, or until potatoes are fork tender. Remove the foil, and let it sit for about 15-20 min to cool slightly and thicken!
Serve this with garlic bread.

I like scalloped potatoes. But I have never turned down mashed, boiled, baked, deep fried or grilled either.
