Does anyone have a recipe for dairy free Butternut Squash Soup?!
halve and de-seed a 3lb squash, brush cut surfaces with oil, stuff cavities with garlic cloves and turn cut side down on baking sheet. cook at 375 for 30 min or until tender all the way through to a fork.
15 min before that's done, sautee 2tbs chopped fresh sage, 1/4c chopped fresh parsley, 1/4tsp dried thyme (or 1tsp fresh), and 1 diced onion in 1/4c olive oil in a big soup pot on medium heat for 15 min until the edges begin to brown.
when the squash is done, scoop it out and add it and the garlic and any juice in the pan to the pot. add 8 cups water and let simmer for 30 minutes (use more or less water depending on whether your squash was more or less than 3 lbs). depending on the squash you use, it may need some pureeing.
season with salt and pepper to taste.
in a small saucepan, heat some butter until just beginning to brown. add whole sage leaves and fry them until they are brown and bubbly. remove onto a paper towel and use as garnish.

Try recipezaar.com they have thousands of recipes on there, may not be listed as dairy free but might be anyway, I use a lot of their recipes as I have to have gluten free.
