This is an awesome recipe for "Triple Corn Spoon Bread". Everyone raves when I make it and it's really, really easy. I skip the mixing bowl and mix everything together in the baking dish.

Fyi......I use regular sour cream instead of the fat free. Sometimes I add chopped jalepenos for a little kick.

This is definitely not a diet recipe, but Christmas is only once a year. My family can't get enough!

Sweet Potato Casserole

40 oz can of cut sweet potatoes in light syrup (about 3-4 cups when mashed)
1/2 cup brown sugar
1/2 tsp salt
1/2 cup unsalted butter, melted
1/3 cup milk
2 eggs
1/2 tsp vanilla


Topping:
1/2 cup flour
1 cup brown sugar
1/2 cup unsalted butter, melted
1 cup chopped pecans

Drain the sweet potatoes and mash with 1/2 cup brown sugar and 1/2 tsp salt in a very large bowl. You can use a potato masher or a hand mixer - you want them to be smooth.

In another bowl, beat the eggs, 1/2 cup melted butter, vanilla, and milk. Pour into sweet potatoes and mix well. Put potato mixture into a greased 9x13 baking dish.

In another bowl, mix the 1/2 cup flour, 1 cup brown sugar, and 1/2 cup melted butter. It should make a crumbly, streusel-like topping. Drop spoonfuls all over the top of the potatoes. Sprinkle the pecans on top.

Bake at 350 degrees until hot - about 30-45 minutes.

EDIT: Since you aren't concerned about dieting... this is a great recipe, too. It is a great twist on the typical corn casserole.


Corn Casserole

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Sizzling Italian Vegetables

2 servings, 3/4 cup each

1 zucchini, coarsely chopped
1 tomato, chopped
2 slices OSCAR MAYER Ready to Serve Bacon, chopped
2 Tbsp. KRAFT Balsamic Vinaigrette Dressing
1/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

COOK zucchini, tomatoes and bacon in dressing in skillet on medium-high heat 6 to 8 min. or until zucchini is crisp-tender and mixture is heated through, stirring occasionally.

SPRINKLE with cheese.
