What is the one Herb or Spice that every cook should have? And why?!

Salt and pepper.

salt , the most commonly used item added for flavor enhancement in the world. though i dont use much myself , and only sea salt at that. salt is used in everything from ice cream to margaritas , now thats a pretty wide range to cover if you think hard

Basil. It enhances everything and it gives your food a little twist!

One is definitely not enough. And it depends on what kind of foods you cook.

If I were starting a collection right now, I would probably get them in this order:

black pepper
garlic powder
onion powder
thyme
basil
paprika
chili powder

i always have whole lemons and olive oil on hand. you can make a nice light sauce for pasta using lemon juice, zest and butter. also, trader joe's 21 seasoning salute. great on everything! whooo!

kosher salt and fresh ground black pepper , because they taste natural. use fresh herbs if possible.

Garlic powder. I use on almost everything I cook.

Simple table salt.
Oh, you ask for SPICE.....
I use ONION POWDER on more occasions than NaCl. - GRANTED, I cook basically Indo-style (pan frying) most. On those occasions when I ROAST or CROCK my meals, I use Curries.

Those are staples. Otherwise, your food will be bland.

beyond that, I'd say Nutmeg.
Nutmeg helps to balance out other spices and compliment dishes from cheese sauces to banana bread to sweet and sour chicken.
