This is a delightful idea for a holiday dinner. My most favorite way to prepare the hens is as follows: Oven at 400
4 Cornish game hens (about 1 pound each)
1/3 C. butter melted
1/4 C canned condensed consomme
1/4 C light corn syrup
Season hens inside and out with salt and pepper. Stuff each with 1/4 C. stuffing if desired (I have used wild rice with a little chopped apple). Place breast up on rack in shallow pan and brush well with butter. Roast uncovered about one hour. During last 15 mins., baste several times with mix of consomme and syrup. The flavor is amazing. Hope you enjoy this as much as I have. Have a merry Christmas!

You just stuff them like a regular chicken, put them all in a roast pan after you season the skin and roast at 325 for about an hour. They cook pretty fast and are my favourite bird.

If you really want a quick dinner, split their backbones length wise and flatten them out. Give them a nice over-nighter in a zip baggie of marinade, being sure to burp out all the air. Do them at 325 for about 30-40 min, or until the leg wiggles loosely.

If you're cooking 2 - 4 hens, stuff with wild rice and mushrooms and bake at 350 for 1 1/4 hour or so.
