Carrots are great and are complemented by most spices. Depends on what you're serving. Dill, parsley, oregano, marjoram and plain old salt & pepper work well with butter or lemon. You can be bolder and try cardamon, caraway, even cinnimon. I also like chinese five spice powder with carrots.

So, what else are you having?

I like melted butter and dill.

Butter, salt and pepper.

Or, you could do a glaze -

1/2 teaspoon salt, if desired
2/3 cup packed brown sugar
1/4 cup margarine or butter
1 teaspoon grated orange peel
1/2 teaspoon salt

Steam your carrots as you desire. While carrots are cooking, heat the brown sugar, margarine, orange peel and 1/2 teaspoon salt in the skillet over medium heat, stirring constantly, until sugar is dissolved and mixture is bubbly. Be careful not to overcook or the mixture will taste scorched. Remove the skillet from the heat.

When carrots are done, stir them into the brown sugar mixture. Cook over low heat about 5 minutes, stirring occasionally and gently, until carrots are glazed and hot.

I prefer salt and cracked black pepper.

Put Parmesan cheese on them after you drain them.

SALT, BUTTER AND CRACKED PEPPER... I LIKE TO MASH UP CARROTS AND MASHED POTATOES TOGETHER WITH SALT, PEPPER AND BUTTER....MMMMMMMMMMMMM

I'm not a fan of carrots, but my daughter in law cooks honeyed carrots for her family. Just boil or steam them in the usual way, drain & put a small amount of honey into the hot saucepan with them, stirr around gently till they are coated in the honey.

melted butter Salt and pepper!

cinnamon, butter, sugar.
