Peanut Butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup light butter
1/2 cup mashed banana
1 cup reduced-fat peanut butter
1/2 cup egg substitute
1 cup brown sugar
1 cup sugar substitute (recommended: Splenda)
Preheat the oven to 350 degrees F. Line 2 sheet pans with a silicone baking mat or parchment paper and set aside. Alternatively, you can do this in 2 batches.
Sift flour, baking soda, and baking powder together and set aside. In the bowl of an electric mixer, blend butter, banana, and peanut butter together. Add egg substitute, brown sugar, and sugar substitute and beat until incorporated. Gradually add the sifted flour mixture to the mixer and continue to mix on low speed until incorporated.
Drop batter, in 1 tablespoon-size balls, onto the prepared sheet pan, about 2 inches apart. Flatten cookies a little with the back of a fork. Bake for 10 minutes or until golden brown and crispy. Let cool on a metal rack.
Chocolate chip
1 1/2 sticks unsalted butter, cut into cubes
1/2 cup dark brown sugar, packed
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 1/2 teaspoons instant espresso
2 large eggs
1 tablespoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup good quality chocolate chips or chunks
Preheat oven to 350 degrees F.
In a large mixing bowl, combine cold butter, dark brown sugar, light brown sugar, granulated sugar and espresso with a hand mixer. Mix at slow speed for 30 seconds and increase speed until the mixture is fluffy, about 6 minutes. Lower the speed and add the eggs 1 at a time. Add vanilla and mix until all ingredients are incorporated. In a separate bowl, whisk together the flour, baking soda and salt. Add the flour mixture to the butter and sugar mixture in batches. Stir with a spatula until well blended. Fold in the chocolate chips or chunks and spoon the dough onto 2 parchment lined cookie sheets at least an inch apart. Bake for 14 to 15 minutes. Rotate the cookie sheet half way through so that the cookies bake evenly. Remove the cookies from the oven and transfer to a wire rack to cool.
Kickapoo Cookies recipe
1 cup (2 sticks) butter
1 cup granulated sugar
1 cup brown sugar
1 cup peanut butter
2 eggs, beaten
2 teaspoons baking soda
4 cups oatmeal
1/4 cup milk
1/4 teaspoon salt
1 teaspoon vanilla extract
Cream first 4 ingredients until light and fluffy. Stir in eggs and vanilla extract. Mix in oats, baking soda and salt alternately with milk. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees F for 15 minutes.

Tassies are wonderful, and if you Google it, you'll find lots of recipes for them...only thing is, you need a miniature muffin pan to make them.

My favorite cookies are and Coconut Oatmeal cookies - these are buttery and taste great.
OATMEAL COOKIES DIPPED IN CHOCOLATE - Wedge
1 cup Flour
1 tsp Baking Powder
? tsp Baking Soda
1 tsp Salt
? cup Butter – softened
1 2/3 cup Sugar
2 Eggs – large or bigger (I prefer to use Jumbo)
1 ? tsp Pure Vanilla Extract
2 ? cup Quick Oats
1 cup Flaked Coconut
16 oz Milk Chocolate - Melted (I prefer Droste a Milk Chocolate candy bar from Holland)
Preheat oven to 375 F.
Stir together flour, baking powder, baking soda, and salt; set aside. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in flour mixture, vanilla and oats. Add coconut. Bake for 10-15 minutes, or until lightly browned at the edges. Cool on a wire rack. One cool dip half of each cookie in the melted chocolate and let harden. Makes about 60 cookies. Cookies will spread when baking.
White Chocolate Chunk with Macademian Nuts!!

INGREDIENTS
1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda
DIRECTIONS
Cream together butter, peanut butter and sugars. Beat in eggs.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.
