Recipes for homemade mac and cheese?!


Question: I'm looking for a recipe for homemade mac and cheese that does not call for cheese soup or for "processed cheese food". It doesn't matter if the recipe calls for exotic cheese or spicy ingredients, as long as it doesn't contain canned coup or processed cheese.

Melt 1 tbsp butter with a tbsp flour in a sauce pan. Add 1 cup milk and heat. Add 1cup grated cheddar cheese and stir until the cheese melts. Mix into cooked macaroni in a 2 quart casserole dish. Sprinkle top with bread crumbs and dot with butter. Bake, covered, for 45 min. at 350. Dee-lish!

"Macaroni is mixed with shredded Cheddar, Parmesan, cottage cheese and sour cream, then topped with bread crumbs and baked."

INGREDIENTS:
1 (8 ounce) package elbow macaroni
1 (8 ounce) package shredded sharp Cheddar cheese
1 (12 ounce) container small curd cottage cheese
1 (8 ounce) container sour cream
1/4 cup grated Parmesan cheese
salt and pepper to taste
1 cup dry bread crumbs
1/4 cup butter, melted

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
2. In 9x13 inch baking dish, stir together macaroni, shredded Cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture.
3. Bake 30 to 35 minutes, or until top is golden.

Google "Ah Ha Mac and Cheese" Its delicious!!! and well worth all the cheese. Its also on foodnetwork.com under recipe search. I do believe that it calls for some processed cheese, but you can just not add that one in and add more of the cheddar or jack. Good Luck!!

favorite noodles shapes for your kids,grate a fresh block of favorite cheese( start with 1 cup and add more if needed.) make your mac and cheese once made place in casserole dish cover with bread crumbs and bake for 20 minutes.

I just use milk, butter, and any cheeses I can find, like mozzerella or cheddar, and microwave them to make a sauce, and put it on cooked noodles. I'm not a big fan of precise measured ingredients, so I just add stuff until it tastes and feels right

GOLDEN BAKED MACARONI AND CHEESE

? cup butter
? cup flour
3 cups milk
1 cup grated cheddar cheese
? teaspoon salt
? teaspoon dry mustard
? teaspoon pepper
1 teaspoon Worcestershire sauce
? package (8 oz.) bite sized macaroni
1 cup grated sharp cheddar cheese
bread crumbs

Melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly; add the seasonings. Cook until the sauce is thickened.
Add one cup grated cheddar cheese and stir until melted. Cook macaroni as directed, drain, and add to cheese sauce and mix well. Turn the mixture into an 8-inch square baking dish or pan. Sprinkle the top with 1 cup sharp cheddar cheese and breadcrumbs.

Bake in a 375°F oven for about 15 minutes. Remove from the oven and place under the broiler until the cheese is bubbly and lightly browned.
