Has anyone heard of panucci fudge?!
Answers: My grandmother told me about having panucci fudge when she was growing up in Marlboro, Mass. I'd like to make a batch for her but I can't find a recipe. Perhaps the spelling is wrong.
Penuche is the original fudge flavor and is made from brown sugar, butter and milk, using no flavorings except for vanilla. It is formed by caramelization of the brown sugar, and thus its flavor is said to be reminiscent of caramel. Penuche often has nuts such as pecans added to it. It is mostly a regional food, found in New England and some places in the South in the U.S., though in the latter it goes by different names, usually Brown Sugar Fudge Candy. It has a tannish color. It is rather more difficult to prepare than the traditional chocolate fudge
INGREDIENTS
2 cups brown sugar
1 cup white sugar
1 cup heavy cream
2 tablespoons light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped pecans
DIRECTIONS
Butter an 8x8 inch square dish.
In a medium saucepan over medium heat, combine brown sugar, white sugar, cream, corn syrup and salt. Stir until sugar is dissolved. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and let cool without stirring until bottom of pan is lukewarm. Pour in vanilla and beat until creamy. Stir in nuts. Pour into prepared pan.
Let cool completely before cutting into squares.
It's Penuche . I really don't know where you can find a recipe but I do know that it it brown sugar based. If you'd like to buy some, the place to go is hotchocolatesparrow.com.
they have a Penuche with chocolate chunks to die for.
I did all kinds of searches and couldn't find anything either....now you have my curiosity up. Maybe it is the spelling, but I tried "fudge types", etc. It should have come up. Good luck, and if you happen to find it, let me know!!!!
It is soo good. It reminds me of a maple walnut fudge almost.... I had it at a candy store back home (Texas).
