i rarely use the oven for chicken! i usually cut it up (small chunks cause kids eat it better!) put oil in the pan, med to med hi heat. and either coat the chicken in bread crumbs or seasoned flour. i cover it for like 3-5 min. then turn it and add either teri or worsch. sauce and cover and cook till done, sometime i add onion, sliced and just put it after i put the chicken in. kids love it. simple easy and tasty.

You could fry your chicken....
3 eggs
1/3 cup water
About 1 cup hot red pepper sauce (recommended: Texas Pete)
2 cups self-rising flour
1 teaspoon pepper

1 (1 to 2 1/2-pound) chicken, cut into pieces
Oil, for frying, preferably peanut oil

In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the house seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
OR TRY...
In a skillet brown your chicken, add can of mushroom soup, and cook until done...

Chicken Lo Mein

1/2 lb. spaghetti, uncooked
1/4 cup Asian Toasted Sesame Dressing
1 lb. boneless skinless chicken breasts, cut into strips
2 cloves garlic, minced
1 pkg. (16 oz.) frozen bell pepper and onion strips, thawed, drained
1/2 cup chicken broth
1 Tbsp. peanut butter
1/4 cup lite soy sauce
2 Tbsp. chopped cilantro
2 Tbsp. chopped cocktail peanuts

COOK spaghetti in large saucepan as directed on package.

Heat dressing in large nonstick skillet on medium-high heat. Add chicken and garlic; stir-fry 3 min. or until chicken is no longer pink. Add peppers, onions, broth and peanut butter; stir-fry an additional 3 to 4 min. or until chicken is cooked through.

Drain spaghetti; return to pan. Add chicken mixture and soy sauce; mix well. Spoon onto serving platter; sprinkle with cilantro and peanuts.

try this one..rub the whole chicken with 2 whole cloves of garlic minced,salt,olive oil, and pepper to taste..put into big frying pan with cover.. add some cubes potatoes on the side and olive oil..let it cook till garlic gets golden brown..!

When you say the top part do you mean the stove top? How about fajitas, stir fry, or poaching. Search for individual recipes on yahoo

Chicken Piccata

3 skinless, boneless chicken breasts
? cup flour
salt
pepper
? tsp. paprika
? cup margarine
1 Tbsp. olive oil
4 Tbsp. water
4 Tbsp. lemon juice
Hot cooked fettuccini (cooked according to the package)

Cut all the fat off the chicken. Place chicken breasts between 2 sheets of wax paper and pound with a wooden mallet (or whatever you can find to pound it with) until thin (about ? inch). Cut the chicken into small pieces, like 3 inches long. Combine flour, salt, pepper and paprika in a plastic bag. Add chicken and coat well. Shake off any excess. Heat margarine and olive oil in a large skillet and add chicken, a few at a time and cook over medium to medium high heat until lightly browned on both sides. Remove and continue until all the chicken is cooked. Drain on paper towels and keep warm.

Deglaze pan with water (pour the water in the pan and scrape it). Add the lemon juice and return chicken to skillet. Heat briefly and serve over fettuccini. If the chicken dries out at all from being on the stove too long, just add more lemon juice.

You could pick up a roasted chicken from the store, or if it's a stove-top casserole you could also use canned (though the flavor is not quite the same as fresh). You can also pan-fry fresh on the stovetop.

You could steam cook your chicken ,just add the seasonings or vegetables to the steamer . And the you can slice, dice , or add to any other dish that you wish .

In a plastic bad add some lemon juice, some white wine (pick a wine you woudl actually drink, though), one teaspoon off minced garlic, the kind in a jar, some onion powder, and some rosemary sprigs. Fresh rosemary is best, but dried is OK too. Shake the bag like mad and let marinate for half a day. Put the whole thing in a pan and cook for 30 minutes, covered, turning every 6 minutes. It will be moist, flavorful, and you'll be able to cut it without a knife! TASTY!

You could boil some water in a large stock pot and then add the chicken. Cook it, let it cool, cut it up and you can do a dozen different things with it. My favorites are chicken salad (add mayo, red onion- whatever you like) or pasta salad w/ chicken.
Quick & easy!

Fry it...just add salt & pepper and whatever other spices you would normally use and add some oil to a pan and cook on low heat so it cooks inside and doesn't burn on the outside leaving the inside still raw.
