Gingerbread cookies!

Gingerbread Boys

You can freeze these cookies for several months in airtight containers.

1 cup butter
1 cup sugar
1/2 teaspoon salt
1 cup molasses
2 tablespoons white vinegar
1 large egg
5 cups all-purpose flour
1 1/2 teaspoons baking soda
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Beat butter at medium speed with an electric mixer until creamy; gradually add sugar and salt, beating well. Add molasses, vinegar, and egg, beating at low speed just until blended.

Combine flour and next 4 ingredients; add to butter mixture, beating at low speed until blended. Cover and chill 8 hours.

Divide dough into fourths. Roll each portion to a 1/8-inch thickness on a floured surface. Cut with a 3-inch gingerbread-boy cookie cutter. Place on lightly greased or parchment paper-lined baking sheets.

Bake at 375° for 8 minutes. Cool on pans 1 minute (this allows cookies to lift easily off of pan); then place on wire racks to cool. Decorate as desired.

Yield: Makes 6 dozen

Shortbread cookies are my personal favourite.
Sorry I don't have a recipe, I usually just buy them from the store.

Apple crisp with whipped cream!!

Take about 5 Macintosh apples.. cut into slices as you would an apple pie.

(I dont measure anything.. so excuse the measurements lol)
About 3cups rolled oats
Handful of brown sugar
3 T cinnamon
about 1/4 cup of butter / marg..
Mix these ingredients together.. mix until all oats are damp with butter.

Mix apple slices with a small handful of brown sugar & about 1 T cinnamon.
Apples along the bottom of a pan (I use pyrex.. works great)
Sprinkle oatmeal mixture across the top.
Bake for about 45 minutes in 350* oven.
Let cool slightly. Top with a bit of whipped cream
YUMMY!!

Prep is about 10 minutes, dishes are 2 bowls & 1 pan.. you can certainly make single size servings as well ! One of my faves on a cold winters night!

Chewy Chocolate Chip Oatmeal Cookies
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

if you want to do something that is really fast...then go with an easy monkey bread that has the flavor of sugar and cinnamon

1 (16 ounce) package jumbo flakey biscuit dough
1/2 cup packed brown sugar
1 (3 1/2 ounce) package instant butterscotch pudding mix
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted


Preheat oven to 350 degrees and grease and prepare muffin tin.
Separate tube of dough into 8 biscuits. Cut each into quarters.
In a medium bowl, combine brown sugar, pudding mix, granulated sugar and cinnamon. Mix well.
Coat each quarter in melted butter. Roll each quarter in the brown sugar mixture.
Divide pieces evenly among 12 greased muffin cups. Pour remaining brown sugar mixture over each filled muffin cup.
Bake 15 to 18 minutes. Using a spoon, carefully remove each muffin from muffin pan.
Serve warm.

Cake:
1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
Crumble Topping:
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened

Brown Sugar Glaze:
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water


Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.

To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.

To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.


even easier...a muddy buddy chex-mix...you could add dried apple chips and cinnamon to it...this is a very very easy and tasty snack...

9 cups Chex? cereal (any variety)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar


Preparation Directions:
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, stir together chocolate chips, peanut butter and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

Sourdough pretzels with cheddar Dijon dip

In a microwave heat up a small tub of cream cheese with 6-8 oz shredded sharp cheddar, a TB Dijon mustard and a TB milk/cream - mix and serve with pretzels - good with sliced of granny smith apples too

Some nice roasted pecans or candied almonds would be lovely with this.
