One more time... Christmas Salad ideas?!


Question: I have to make a salad (potato, pasta, fruit, ??)for my hubby's family x-mas party.. any Ideas.
(FYI: I've already posted this question once, I just wanted to see if there were anymore ideas out there)

Recipe for Fluff

1 container Sour Cream (2 cups)
1 pkg Cherry(red) or Lime(green) Jello Powder
(or any flavor)
Stir these two together well
Add 1 can (drained crushed pineapple)
1 container Cool Whip

Mix it all together and refrigerate for a least on hour or two or overnight. Quick and easy and it disappears like magic.

Just do the clasic lime green jello with the fruits people love it

I got one for you. Very festive and oh so yummy, it's a BIG hit at Christmas parties!!

Cranberry Cream Cheese Gelatin Salad

1 tablespoon unflavored gelatin
1/2 cup cold water
4 cups chopped fresh cranberries
2 cups sugar
1/2 cup chopped pecans
1 (6-ounce) can frozen orange juice concentrate
1 (3-ounce) package lemon flavored gelatin
1 cup boiling water
2 (3-ounce) packages cream cheese, softened

1. Sprinkle unflavored gelatin over 1/2 cup cold water. Let stand about 5 minutes to soften.
2. In a bowl, combine cranberries, sugar and pecans.
3. Blend orange juice and softened gelatin in a small saucepan over medium heat until gelatin dissolves.
4. Combine gelatin with cranberry mixture and pour into a 13 x 9 x 2-inch glass dish. Refrigerate until firm.
5. Dissolve lemon gelatin in 1 cup of boiling water.
6. In a separate bowl, gradually blend lemon gelatin into softened cream cheese. Pour over cranberry mixture in pan. Return to refrigerator and chill until firm.

Marshmellows, fruit cocktail and softned cream cheese

softened the cream cheese and pour the juices of the fruit coctail as well mix everything good and more or less marshmellows I prefer more to make it more guey. Cool for a couple of hours and serve cold. Taste really good

what about italian squid salad.. I love squid
1 1/2 pounds squid, tubes and tentacles
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup finely chopped and seeded tomato
1/4 cup finely chopped red onion
1 reb bell pepper chopped
1 green bell pepper chopped
1 yellow bell pepper chopped
2 celeary chopped
1/4 cup chopped fresh cilantro leaves

Thoroughly rinse the squid under cold water and pat dry. Cut the tentacles in half lengthwise. Cut the bodies in half lengthwise as well and then into 1/2-inch wide pieces. Set aside.
Over high heat, bring 1/2 inch of water to a boil in a 6-quart saucepan. Decrease the heat in order to maintain a simmer. Place the squid in a steamer basket and gently set over the simmering water. Cover and steam for 2 to 4 minutes. Remove the steamer basket from the pot and plunge the squid into ice water to stop the cooking. Remove from the water and drain thoroughly. Set aside.

In a large mixing bowl whisk together the lemon juice, olive oil, salt, black pepper, . Add the squid, tomato, onion, all the peppers and celarty and cilantro and toss until combined. Cover and refrigerate for 1 hour before serving.

very fresh and good. alway's a hit at my party's.

This one is really yummy. It's sort of an Ambrosia-type thing, but made with the tiny pasta beads...Good luck!

Italian Pasta Fruit Salad

1 cup sugar
2 T flour
1/2 tsp salt
1 1/3 cups pineapple juice, drained from fruit
3 egg yolks, beaten slightly

1 1/3 cups DeCecco or Ronzoni Mini Pasta (in a blue box)
2 small cans mandarin oranges
1 lg can crushed pineapple
1 lg can pineapple chunks
1 - 12 oz tub Cool Whip

Drain all of the fruit, reserving 1 1/3 cup for custard. Add pasta into 2 quart pot of boiling water and boil for 10 minutes, then cool. In a saucepan, add sugar, flour, egg yolks, salt and pineapple juice. Cook over medium heat until thick, stirring constantly. Cool. Pour cooled custard over the pasta and mix thoroughly. Chill overnight. Before serving, fold in drained pineapple and mandarin oranges, and Cool Whip.

I make a lunchmeat salad thats always a hit.
go to local deli counter choose at least 4 meats
and order 1/4 pound of each (sliced thick!!)
I use:

bologna
ham
turkey
roast beef
pepperoni
salami

then get

black olives
pepperocini
cheese cubes (whatever kinds you like)

cook a pound of spiral noodles
mix all of this with italian dressing.
Very tasty salad!

My favorite recipes are for Pistachio salad, frog eye salad and spinach mandarin salad.

Pistachio Salad
8 oz whipped topping
1 pkg pistachio pudding mix
Favorite fruit. pineapple, bananas, mandarin oranges, peaches, pears, strawberries, grapes . . etc
1 8oz cottage cheese (optional)

Mix pudding mix with a few tablespoons of fruit juice from any can of fruit. Add whipped topping. Add fruit and cottage cheese. ( I like cottage cheese but a lot of people don't) Chill and serve. Good Luck.

Spring Strawberry Spinach Salad

INGREDIENTS:
1 bunch spinach, rinsed
10 large strawberries, sliced
1/2 cup white sugar
1 teaspoon salt
1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds
DIRECTIONS:
1. In a large bowl, mix the spinach and strawberries.
2. In a blender, place the sugar, salt, vinegar, and oil, and blend until smooth. Stir in the poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Frog Eye Salad

INGREDIENTS:
1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows
1 cup shredded coconut
DIRECTIONS:
1. In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
2. Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
3. In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.
