MY chocolate bark is crumbling after a couple days. What did I do wrong?!
Answers: I made chocolate bark a couple days ago. I melted Ghirardelli milk chocolate morsels in a double boiler then spread it out on a cookie sheet line with wax paper and immediately put it in the refrigerator. After I broke it apart into large chunks, I put them in a ziplock baggy and left them on my counter. Its been 2 days since and I noticed they were turning white-ish so I picked up the bag and they were crumbling apart! What happened? What do I do next time to prevent this?
The plastic bag was your downfall. The chocolate didn't "breathe" or have air circulating around it.
The refrigerator didn't help matters either.
The chocolate suffered from "chocolate bloom". The cocoa butter separated from the chocolate.
No harm, No foul. Re-melt the chocolate in the double-boiler and leave the chocolate on the counter loosely covered with clear plastic wrap.

you let them out in the air too quick. and don't put them on the counter you could have left bleach on there or so meting and the chemicals go through the baggie i would not eat them
Its seperating and its normal. Maybe you made it too thin? What were you trying to accomplish by melting plain chocolate?
u did not add wax to give it strenghth, and to raise its melting point a little.....the white-ishness is from water getting into the melted chocolate......
