When do I put my vegetables in with my turkey?!

You can certainly put veggies in with the turkey if you would like. Add them about 45 minutes before the turkey is ready. Personally, I don't like my veggies in the turkey juice. I roast my veggies in a separate pan and put them in the oven about 45 minutes before the turkey is done. Test your veggies for tenderness with the tip of a knife.

You don't put them "in" with the turkey, you cook them on top of the stove don't you? Anyway, if you are having turnips, start them 45 min. ahead of time. Potatoes, carrots etc. all take about 15 min. so start them boiling about when the turkey is done. By the time you make the gravey, slice the bird and scoop out the stuffing, your veggies will be ready. Hope this helps you.

If you mean things like onions, carrots and celery that are roasted along with the turkey in the same pan, those are put in at the beginning. They're there to add flavor to the pan drippings for the gravy. They're not really intended to be eaten.

You can always roast other veggies separately for eating as a side dish, but don't put them in the roaster with the turkey. They'd only need to be roasted for 35 to 40 minutes.

I stuff my turkey with onions and celery, but it's to give the turkey more flavor. Do you mean you'd like to roast the veggies, in the way that they are cooked with a pot roast? If so, I'd put them around the turkey 30 mins. before the turkey is done.
