Chocolate Peppermint Cookies

You can crush a candy cane and sprinkle it over the top before the glaze sets.

Cookies:
2 cups all-purpose flour
3/4 cups unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light brown sugar
3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
2 cups chocolate chips

Glaze:
3/4 cup confectioners' sugar
2 drops mint extract, or more to taste
3 1/2 teaspoons water


For the cookies:

Preheat oven to 350 degrees F.

In a medium bowl sift together flour, cocoa powder, baking soda and salt. Set aside. In a mixer beat together the butter with the sugars until fluffy, about 2 minutes. Add eggs 1 at a time, beating until smooth after each addition and scraping the sides of the bowl as necessary. Add in the vanilla. On a low speed beat in the flour mixture a little at a time. Gently mix in chocolate chips.

On an ungreased cookie sheet, drop teaspoons of the batter about 2 inches apart. Bake until just cracked on top, about 8 to10 minutes, rotating the pan halfway through the cooking time. Cool completely.

For the glaze:

In a small bowl mix together the sugar; mint extract and water until smooth. Transfer mixture to a medium resealable plastic bag and snip off the corner. Drizzle glaze over cooled cookies. Let cookies stand until set, about 10 minutes.

I can tell you a brownie recipe.....
Buy a box of any prepared brownie, add peppermint extract to the batter not more the 2 tsp, because it will be over powering. Use some canned frosting or make your own and then crush peppermints on top, there awesome and easy.

Go To Any Food Store And Buy Chocolate Chip Cookie Dough And Peppermint Extract Mix The Cookie Dough With One Or Two Capfulls Of The Extract And Get Baking.

Peppermint Snowballs

18 oz package of chocolate sandwich cookies, finely crushed
8 oz package cream cheese, softened
6 oz package while melting chocolate
1 - 1 1/2 c. peppermint candies, finely crushed

Mix together crushed cookies and cream cheese. Roll into 1-1/2 inch balls and set aside. Melt white chocolate in the top of a double boiler over low heat; stir in crushed candy. Dip balls into chocolate and set on wax paper to harden. Makes 2-1/2 dozen cookies.

These cookies are easy to make and very tasty. If you want to intensify the peppermint taste, use Oreos with the mint cream filling.

Double Chocolate Chip Cookies with Peppermint

Ingredients-
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter
3/4 cup sugar
3/4 cup brown sugar
2 teaspoons pure vanilla extract
2 large eggs
2 cups semisweet chocolate chips
1 cup bittersweet chocolate chips
1/2 cup coarsely chopped soft peppermint candy


Preparation-
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, stir together flour, baking soda, and salt. In a large bowl, stir together the butter, white sugar, and brown sugar until creamy and smooth. Stir in vanilla; then stir in eggs one at a time, stirring until the mixture is creamy and well incorporated. Gradually stir in the flour, 1/2 cup at a time, mixing well between each addition. Stir in the semi-sweet chips, then the bittersweet chips. Mix in the peppermint candy, stirring until evenly distributed. Drop by spoonfuls onto ungreased baking sheets.
Bake in a preheated oven for 9 to 11 minutes, or until golden brown. Remove from oven; allow cookies to cool momentarily on the sheets before removing them to wire racks to cool completely.

CHOCOLATE CANDY CANE COOKIES


1 8-oz. package softened cream cheese
? cup softened butter
1 cup gran. Sugar
2 tsp vanilla
2-? cups flour
? tsp baking soda
4 squares semi-sweet baking chocolate, melted
1 6-oz. package white baking chocolate
12 hard peppermint candies, crushed


Preheat oven to 350 degrees F. Beat cream cheese, sugar, butter & vanilla in large bowl w/electric mixer on medium speed until well blended. Add flour & baking soda; mix well. Blend in semi-sweet chocolate. Shape tablespoons of dough into 52 balls. Roll each ball into a 3” lonh rope. Place 2” apart on baking sheet, bending top of each slightly to resemble candy cane. Bake 10 to 12 minutes, or until lightly browned. Cool 5 minutes on baking sheet; transfer cookies to wire rack & cool completely. Microwave white chocolate as directed on package; drizzle over cookies. Sprinkle with crushed candies. Let stand until chocolate is firm.


Yield: 52 Cookies
