In Britain, goose is the traditional fare. In the US, hams seem to be a favorite, though not by much; many folks have turkey, chicken, or even pork chops. Pork loin has become an increasingly popular feature in some communities.

I suggest making whatever you and your guests like, before the 'nutrition police' start making your choices for you.

We're having roast goose or standing rib roast. Try a honey baked spiral sliced ham! Make latkes (potato pancakes) with that. They're wonderful with applesauce and sour cream.
You can take a clue from the Scandinavians and serve lutefisk.
