Jacket potatoes are simply unpeeled, baked potatoes (potatoes in their "jackets"). Bake your potatoes as you would normally. When serving, cut a slit length-wise, several cuts width-wise, squeeze till the white parts start to squish out, then top with a pat of butter and some grated cheese.
Voila! Jacket potatoes with cheese!
8 ounces low fat cottage cheese
3 green onions (finely chopped)
2 tablespoons parmesan cheese (grated)
2 tablespoons fresh basil (chopped)
1 tablespoon fresh chives (chopped)
1/4 teaspoon garlic powder (opt add)
mccormick lemon-pepper seasoning (opt add to taste)
6 baking potatoes (baked or microwaved till fork-tender)

1. Combine cottage cheese w/onion, parmesan cheese, herbs & opt adds (if using).
2. Cut a deep cross in ea potato & gently press sides to open the cross. Fill & mound herbed cottage cheese equally among the 6 potatoes & serve immediately.
3. NOTE: If you want a smooth texture or simply want to disguise the cottage cheese from the kids, use a stick blender to puree it till smooth & then mix in the herbs & seasonings. They'll prob think it's the best sour cream they've ever tasted. :-).

Peel the potatos, cut the potatos half way horizonitally, flour the potatos and throw it in the oven. The potato will flower up.
Here is the way I like to do them
Preparation time: 10 minutes. Serves 8
Ingredients:
4 large baking potatoes (russet potatoes are good for this)
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup of shredded cheddar cheese, divided
Instructions:
Preheat your oven to 350 degrees F
Scrub your potatoes under cold water, prick them several times with a fork and place them on your oven rack in the lower third of your oven
Bake the potatoes in the lower one third of your oven for about 1 hour
When the potatoes are done (baked) allow them to cool for 10-15 minutes
Slice the potatoes in half lengthwise and then scoop the flesh into a large bowl and save and -save the skins
To the potato flesh, add the sour cream, milk, butter, salt and pepper, 1/2 cup of cheddar cheese
Mix the potato mixture with a hand mixer until well blended and creamy
Spoon this mixture back into the potato skins
Top each with the remaining cheese
Return these potatoes to the oven on a sheet pan and bake for another 15 minutes or until piping hot and the cheese has melted
