Two-thirds?!


Question: What does it mean with the instructions say ,"place all ingredients in a heavy sace pot and reduce the liquid over medium/high heat by two-thirds." I feel so dumb...my husband is a nerd and he couldn't even figure it out....please help me.

cook untill you have only a third of the liquid left in the pan...i.e. boil off two thirds of liquid and sauce is thickened

It is hard to tell, you have to take a good estimate. For example if you have 3 cups of ingredients you reduce it until you have a 1 cup. So if you are looking at what you have in the pot a little more than half should be about 2/3.
