What can be used instead of beef suet in a recipe of christmas pudding?!
I use some parchment paper or tea towel, roll it into a log, then wrap it in foil, steam it in my smaller roast pan, it should take 45-90 minute depending how big it is, let it cool then unwrap, if you have a pudding basin or cloth use that. I have used in the past small stainless steel bowls also, wrap it cut it portions and re heat it, I like the microwave, but over a steamer is fine.
I like hard sauce or custard to, my grandmother use to take an instant caramel pudding and use water to thicken it instead milk, it came out clear, and while not my choice we enjoyed it for may Xmas dinners until she past away in 1991.
Answers: I am a former chef and had to make a non meat based variety one in some of the hotels I was a sous chef in, you will find just regular veg shortening is fine, the suet just keeps it moist, add some molasses, brown sugar and cut back on the flour and breadcrumbs, soak the fruit overnight in apple juice to plump them up, and do not steam or boil it to hard.
