try looking in a cook book

hamburger:
add A1 to the meat (mix it in the meeat and then make patties)
or Worechester
or onion soup mix

Tacos:
use green chilis in the meat while cooking... add salsa to it too... just a little.
make your own shells - by taking the small flour tortillas and carefully fry them in a deeper frying pan with the oil... using tongs, you can bend them into the hard shell shape... and let cool on paper towels...


Meatloaf - i make mine like an italian meatball...
my recipe is secret tho :) jk...
lots of oregano, basil, garlic salt, pepper
corn flakes (yes cereal) in a blender with 2 slices of bread to make the bread crumbs
i use half turkey and half beef ground meat
eggs
ketchup
A1
frozen peas, corn and carrots
onion - chopped or in blender

mix and bake on a lower temp of 425 for a couple hours - just let it go... then once it is done i glaze it with A1 and ketchup mixed together...

For meatloaf, I started using a cup of Stovetop Stuffing instead of breadcrumbs. Gives a great taste. I add onion and garlic "into" my hamburger patties so the flavor cooks in.

Mix onion soup mix into the meat for burgers...Try avocado on tacos, very good. Cheese inside of the meatloaf...also very good..got it from a recipe on the internet.

Hamburgers

I mix some oatmeal, finely chopped oinion, an egg, and cajun seasoning together with the hamburger. Then make it into patties and bbq it mmmmmmmm

tacos I just use the taco seasoning ( reduced sodium) with the hamburg

and meatloaf I make pretty much the same as the hamburger except I put ketsup in it and on top of it . Its really nice and moist if you cook it in the slow cooker.

Dry mustard or curry are good for livening up a "tired" recipe. Not together, though LOL

hamburger---makes 2 thin patties and put bcrumbled blue cheese in the middle of 1 pattie then put the other pattie on top and squeeze the sides together. grill them up--you can pretty much stuff them with anything you want.

Use your imagination...add what you like! To hamburger meat, add minced onion, seasoned salt, pepper, even some grated sharp cheese. Tacos, add guacomole, sour cream, etc. Meatloaf, I add eggs, breadcrumbs, ketchup, mustard, minced onion and some marjaram seasoning.

My secret for burgers is to buy fresh beef or pork or both... and then cut the meat in big peaces and put them in the mixer with: 1 fresh onion, parsley, fresh herbs, garlic, pepper, salt, curry powder and one egg... once all mixed I form a ball... and then pur the meat in the fridge for 20 minutes. Then i take the ball and separate it in small balls, to form hamburger. Then you can grill your meat. For the Burger itself: take bread with some sesam seeds, lettuce, onions, cucumber, tomatoes, mushroom, gruyère (Swiss Cheese), and for the sauce: ketchup, mayo, mustard or anything you like!Enjoy it

ITALIAN HAMBURGERS

2-3 lbs ground sirloin or ground chuck
Kraft sliced American cheese
1 medium bell pepper
1 medium onion
1 jar Boston market brown gravy
flour
1 15 oz can Hunt's tomato sauce
1 15 oz can Hunt's diced tomatoes
Minute Rice
3 tablespoons cooking oil
salt and pepper

Make thin hamburger patties (in even numbers two patties will make one hamburger).
Fold a piece of Kraft cheese into a square and place in the middle of one patty. Place another patty on top of the cheese filled patty. Knead together to make one big patty.

Dice onion and bell pepper, set aside. In electric skillet or large black iron skillet, add oil; brown hamburger patties on both sides, place on paper towels to drain.

Using the oil in the pan, make a thick brown gravy with flour and water, add salt and pepper to taste. Add jar of Boston Market Brown Gravy, tomato sauce, diced tomatoes, chopped onion and green pepper, stir well and simmer for approximately 15 minutes.

Return hamburgers to sauce, cover and cook on low heat for approximately 1 hour, stirring frequently.

Make Minute Rice for the appropriate number of servings.

Place one hamburger on each serving of rice, cover with sauce mixture.

Goes well with fresh green beans or English peas and rolls.

TACOS
Ground beef
(I prefer ground chuck)
Salt
Chili powder
Paprika
Cumin
Garlic powder or 2 cloves
Bell pepper
Onion


Instructions for taco recipe:


Let's take 2 pounds of ground beef in 2 quart sauce pan add 1 teaspoon of salt, 2 tablespoons of chili power, 1 teaspoon of garlic powder or 2 chopped garlic cloves, 1 teaspoon of cumin, 2 tablespoons of paprika. Enough water to cover meat.

Bring to a boil. Simmer over medium low heat about an hour. I will check in about 15 minutes take a potato masher break up the meat a little don't want it to cook up in lumps.

Repeat this process 2 or 3 more times. Also make sure we don't run dry of water. Add water if needed. Hour over already!


OK, add 1/2 medium chopped onion, 1/2 medium chopped bell pepper, continue cooking 20 or 30 more minutes.

Remove from stove pour into strainer. Let set for 10 or 15 minutes to make sure all grease was removed. At this point we do want to keep the liquid. Now lets remove the grease from the liquid.

Tip> Place in freezer for a few minutes. When grease separates and starts to hardened take spoon and remove. Should have very little liquid left.

1/2 cup would be fine. Place in small pan bring to a boil. Dissolve 1 teaspoon of corn starch in 1/4 cup of cold water add to liquid simmer 4 or 5 minutes. Fold into meat. Now we have a tasty moist taco, grease free.

Looks like a lot of work. Lots of cooking. Not at all. While cooking this, I could be waiting on tables.





Try this. Take a box of salt, pour some into small bowl, get out all your measuring spoons start with 1/4 teaspoon dip in bowl, then place in hand get a feel pour back in bowl.



Now with fingers, dip back into bowl get 1/4 teaspoon. Repeat with all spoons till you get it right. This is the way I teach my cooks. Less time consuming. A faster cook, on the way to being a chef.

Take meat spices and water, put in 2 quart sauce pan. Less than 2 minutes right! Now we are cooking and having fun. Guess what, when having fun our food tastes better.

MEATLOAF
Easy Meatloaf

1 (15-ounce) can mixed vegetables, drained
2 pounds lean ground beef
1/4 cup wheat germ
1/4 cup bran
1/4 cup tomato ketchup
Preheat oven to 350°F (175°C). Grease a 9 x 5 x 3-inch loaf pan; set aside.
Pour vegetables into a large mixing bowl; mash mixed vegetables as fine as possible. Add ground beef, wheat germ and bran and combine thoroughly. Add more bran or wheat germ if needed to make a firm mixture.
Form into loaf and place in prepared loaf pan. Drizzle ketchup on top.
Bake for 35 to 45 minutes or until firm.
Makes 6 servings.

Hamburgers: We add A1 steak sauce, garlic powder, diced onions, diced green bell pepper, and seasoning salt/pepper in beef. Flatten and fry, drain grease repeatedly during cooking process...

Tacos: I add cumin, chili powder, garlic powder, and salt/pepper to ground beef, add diced potatoes, and a tomato bouillon (Knorr/Goya) cube...cook beef, drain, add spices and simmer in 2-4 tbsp water until potatoes are soft.

For chicken tacos, add above spices to cooked shredded chicken and simmer in 2-4 tbsp water until blended.

For beef fajitas, Pan fry or grill flank steak in the above spice rub, except... use less cumin, no tomato cube, and add lemon pepper.

Meatloaf: I just messed one up the other night...I concede to another answerer.

Hamburgers... I use 90% lean from Sam's Club (under 2 bucks a pound, you can't beat it!!)
I 'fry' it in hickory flavor liquid smoke... Yumm.

Meatloaf- I hate hot ketchup!! LOL, I use bar be que sauce instead.

Taco's, you can'r beat my tacos! (Well, I like them)
I set everything out in bowls and we make our own, the 'buffet line' has all of this...
Seasoned meat, refried beans, goats cheese (when I can get the aged stuff, seems like they just have 'fresh' around here), fiesta cheese, sour cream, onions- chopped very fine, hot and mild peppers, salsa, taco sauce and your normal shredded lettuce, chopped tomotoes and both flour and corn shells.
I fry my corn shells in the grease left from the seasoned meat, sprinkled with just a bit of garlic salt and parmesan cheese. We used to get chips cooked this way at an authentic mexican restaurant, and I love tastadas!!

Tacos-I use 1/2 the taco seasoning it calls for-always comes out better or use steak instead of chop meat with peppers
and onions

meatload, I put ketchup on top-always taste better
I just use salt, pepper, basil, parsely, egg, splash of milk, bread crunps and some parm cheese

On all the ones mentioned.Add salsa and cheese...The best...
