* 4 very ripe plantains (black)sweet plantian
* 1 cup (low fat) milk
* 1/2 cup sugar or brown sugar
* 4 tbsp. margarine
Peel plantains, place them in a baking dish and pour the milk and sugar over them. Spread one tbsp. of margarine over the top of each plantain. Bake at 400 for about 1/2 hour.
Microwave: Cut off the ends of the unpeeled plantains and place them on a microwave-safe plate. Place a moist paper towel over them and microwave on high for about 8 minutes or until the skin opens up. Let cool and then peel. Place them in a microwave-safe baking dish and pour the milk and sugar over them. Spread one tbsp. of margarine over the top of each plantain. Microwave on high for about 12 minutes.

Serving Suggestions:
Serve as a side dish (like candied yams).

Peel plantains and slice in half inch thick pieces. Fry them in hot oil for 5 minutes. Remove from oil and flatten them with a glass or bottle. Refry until crisp. Add salt to taste. Serve warm.

Plantains go way to sweet to cook when they are yellow. Get them as green as you can.

Peel them and fry them whole, turning them as you need, until they change color all over. Not long, maybe 5-7 minutes. Put them on a paper towel and let cool, When cool enough to handle cut them into 3rds or 4ths depending on there size and set the cut parts standing up and then mash them. Use a chicken tenderizing disc or a heavy pan. Then fry the mashed discs you've made until brown.
