WHATS your FAVORITE AND EASIEST SIDE DISH TO MAKE?!
Answers: ..I'm making a "crown roast " pork for dinner on xmas...and am looking for an easy side dish, but something rather "unique"...not the green bean casserole...Something different,...potatoes or veggie dish, any ideas?
I make a real good corn casserole
1 can creamed
1 can sweet
1 box of Jiffy corn muffing mix
1/2 stick butter
Mix the corns and the mix and add the melted butter. Pour into a casserole and bake at 375 for 45 min.

something that isn't so festive but good is scallops or shrimp marinated and then broiled with bacon wrapped around.

go with the traditional mashed potatoes, u can never go wrong w/ that.
macaroni and cheese. oh, you want something different. chop up a small onion, or half of an onion, and sautee it in butter until it's nice and cooked, then add a can of drained cut green beans, or two. stir, cook 5 more minutes...yummy!
Baked Yams taste great with pork. Green bean casserole is easy too: cook green beans, toss with olive oil, grated Parmesan, bread crumbs and a dash of garlic powder, salt and pepper. (ok, I read that you don't want the green bean casserole, but this one is yummy, trust me)
Twice baked potatoes! Throw them in the microwave until they are soft, scoop out the insides add cream cheese or sour cream - or a little of both, mix it up and add the potatoe cheese mixture back into the potato skins. Stick in the fridge or freezer until the day you are ready and add cheddar cheeese on top, heat them in the oven and when they are the right temp, add some chopped chives and wallaaaa! a wonderful filling side dish that everyone loves!
Or spice cheesy cauliflower... cook cauliflower in water or steam, drain cauliflower, add cheddar cheese, mayonaise and spicy mustard, cook until cheese is melted and mayo is well blended - it sounds strange but it's always a hit! :)

Chipotle Mashed Potatoes
I N G R E D I E N T S
2 pounds (900 g) potatoes, peeled, boiled, and mashed
6 tablespoons (90 ml) butter
1/4 cup (60 ml) heavy cream (or more to taste)
1 medium onion, finely chopped
1 green bell pepper (capsicum), seeded and finely chopped
1/4 teaspoon (1 ml) ground cumin
1 canned chipotle pepper (or to taste), finely chopped
Salt and freshly ground pepper to taste
Combine the mashed potatoes, 4 tablespoons (60 ml) of the butter, and cream in a mixing bowl and stir to combine. Melt the remaining butter in a skillet and sauté the onion, pepper, and cumin until the onion is tender but not brown, about 5 minutes. Stir the onion mixture into the potatoes. Add the chipotle pepper (**note, that is one pepper, not one can of peppers), salt, and pepper, and taste to adjust the seasoning. Spoon the mixture into a buttered casserole and bake in a preheated 375F (190C) oven for 20 minutes.
My favorite *EASIEST* is a baked potato with a slit cut into it in which you place a bay leaf. Rub the outside with olive oil and sea salt, bake in the oven, in foil, until tender. A LOT of flavor with a unique twist that's extremely easy and cheap.
-take 2 boxes of small jello, make it (but don't do anything with it just yet)
-take about 2 cups of thin pretzels, break them into little pieces.
-take a half stick of butter, melt it, then pour it over the broken pretzels.
get a 9x12 oblong dish, and spread your pretzels on the bottom.
-then take the jello mixture and pour it on top.
-let the jello sit, then when it's done use cool-whip (not whip cream) and spread it on top of your pretzel/jello concoction!
just for fun, let people guess what's in the jello!

Sweet Potatoes:
4 large potatoes
2 t. cinnamon
3/4 brown sugar
1/2 cup chopped nuts (pecans or walnuts)
1 cup mini marshmallows
Peel, quarter and boil sweet potatoes
Drain water and mash them in a large pot or bowl. Put 1 t. cinnamon, 1/4 cup brown sugar in the potatoes and fold well. Spread into a baking dish. Top with 1/2 brown sugar, marshmallows, 1/2 cup chopped nuts and 1 t. cinnamon. Bake at 350 for about 20 minutes.

cut up about a pound of bacon in tiny peices and cook on low heat in a pot and when they are warm, not cooked all the way add a can off drained green beans. Heat on low heat until enough of the grease from the bacon has come out and the green beans are cooked.
They are really fattening but OMG delicious. Seriously!
Hashbrown casserole....
2 lb. frozen hash browns, defrosted
1/2 cup melted butter
1 can cream of chicken soup
1 pt. sour cream
1/2 cup peeled, chopped Vidalia or sweet type onion
2 cups grated sharp cheddar
1 tsp. salt
1/4 tsp. black pepper
2 cups crushed bread crumbs or corn flakes crumbs
1/4 cup melted butter
Preheat Oven to 350 Degrees F. Defrost hash browns and drain well. Combine next 7 ingredients. Mix with hash browns. Put all in a 3 qt. Casserole. Sauté bread crumbs or corn flakes lightly in butter and sprinkle on top. Cover and bake at 350 for about 40 min.

Cream Cheese Potatoes
You need: 10 large potatoes
6 oz. cream cheese
1 cup sour cream
2 tsp. onion salt
1 tsp. salt
2 tsp. butter
1/4 cup grated parmesan cheese
Then just: cook and mash the potatoes...add all the
ingredients....mix again.......lightly grease a casserole dish...
toss it all in ! Cool in fridge overnite
The next day just toss it in the oven for 45 minutes on 350.

Sweet and sour brussels sprouts
2 pkgs (about 1 1/2 lbs) Brussels sprouts cut in half
1/2 cup cider vinegar
1/2 cup sugar
1 tsp mustard powder
1 tsp salt
12 tsp black pepper
1 medium red pepper cut in thin strips
1/2 cup thin sliced red onion (about half of a med size)
Mix together in a casserole dish, cover and bake for about an hour at 375. If the oven temp is lower, it will take longer, if the temp is higher, it will take less time - but not much. Stir once or twice during cooking to make sure the sprouts get sauced.
Shoepeg Corn & Green Chile Casserole
2 tablespoons butter
1/2 cup onions, diced
2 (12 ounce) cans white shoe peg corn
2 (4 ounce) cans diced green chilies
8 ounces sour cream
16 ounces Monterey jack cheese, shredded
salt
pepper, to taste
1. Melt butter in a large sauté pan on medium heat.
2. Add onions and sauté until translucent.
3. Add corn and green Chiles (including juices), stirring until warmed through.
4. Stir in sour cream, Monterey Jack, salt& pepper and mix well until cheese just starts to melt.
5. Transfer to crock pot, cook on HIGH for 3 or more hours may need to turn down, depending on your crock pot!
i always thought that mac & cheese was a great side dish for any meal
Honey Roasted Red Potatoes....
Chop as many potatoes into small cubes as needed for the amount of people being served. Drizzle with honey and a little bit of oil. Sprinkle with salt,pepper and ground mustard. Toss to coat. Bake at 350 until tender.

Vidalia Onion Risotto

2 teaspoons vegetable oil
2 cups chopped Vidalia or other sweet onion
2 large garlic cloves, minced
1.5 cups uncooked Arborio risotto
2 (14.5 ounce) cans vegetable broth
1/2 cup (2 ounces) crumbled feta cheese, divided
1/3 cup chopped fresh flat-leaf parsley
1/4 cup (1 ounce) grated fresh Parmesan cheese
Freshly ground black pepper
Flat leaf parsley sprigs (optional)
Heat oil in a saucepan over medium heat. Add onion and garlic; saute 1 minute. Stir in risotto. Add 1/2 cup broth; cook until liquid is nearly absorbed, stirring constantly. Add remaining broth, 1/2 cup at a time, stirring constantly until each portion of broth is nearly absorbed before adding the next (about 20 mins. total).
Remove from heat; stir in 1/4 cup feta, parsley, and Parmesan. Spoon into a serving bowl; top with 1/4 cup feta and pepper. Garnish with parsley sprigs. Makes 5 servings.
OK here is an easy secret recipe. get some frozen potato hashbrowns (like oreida - the cubed kind)

sour cream
package of cheese
corn flakes.
mix the hashbrowns (uncooked), cheese, sour cream and soup together. salt and pepper to taste. put in a well greased pan and back for about an hour on 350.
then, put cornflakes on top, drizzle with butter, and put back in the oven for about 10-15 minutes
it is SO GOOD AND EASY!!!
