Can mayonnaise substitute egg when baking?!

It really depends what your are mixing it in. If you were making a custard I would say no because the egg would add flavor, act as a binder and thickener. Mayonnaise can't do this. It is not binding nor is it thickening. Mayonnaise has egg in it but the oil content is high. I would stick to the egg or egg white. Keep mayonnaise for the sandwiches.

applesauce works not the chunky kind of course

mayo may work....but whatever your making wouldn't taste the same

It depends on what you're baking. Quick breads yes. cakes yes, pudding and sauces no. yeast breads, cookies, and browines no. I hope this helps
