The same way you cook them for 4 or 10, just smaller portions.
Bake in foil, pricking the skin a bit with a fork beforehand to release the steam. Depending on size, one potato per person. 400 degrees for an hour, approximately.
Slice open after baking and add S&P, butter and if you like, a Tablespoon of brown sugar.
You can either make the recipe as is or halve the ingredients for a lesser amount.

3-pounds sweet potatoes
?-cup light brown sugar, packed divided
3-tablespoons butter
5 teaspoons cinnamon
?-teaspoon nutmeg
?-teaspoon salt
1-cup milk
Preheat oven to 400o
Grease 1? quart casserole
Cook sweet potatoes in boiling salted water until done; drain peel and mash them.
Stir in all the remaining ingredients except 2 tablespoons of sugar.
Turn the mixture in to prepared casserole and sprinkle with remaining sugar and dot with extra butter.
Bake at 400o for 30 minutes.
you can bake them just like a regular potatoe and put some butter with brown sugar on top afterwards...
here is a good sweet potatoe / mashed potato recipe i came up with myself
1 idaho potato
1 sweet potatoe
2 tablespoon margarine or butter or spread (which ever you prefer)
1/3 cup cheddar cheese
1 tablespoon of salt
peel the sweet potatoe and the idaho potato.
boil some water and season with salt. boil the potatoes on medium heat for about 25-30 min. check if they are ready by poking with a tooth pick, if it goes in easily, they are done. for faster results, you might want to cut the potatoe into smaller pieces. times will vary depending on size. remember, the trick if they are done in the toothpick check.
afterwards, remove from water and mash both potatoes with the butter and cheese, until cheese is completely melted. depending on taste, add more butter, salt or cheese. if you decide on adding more, add little by little until you find your taste.

peel them and cut them into inch cubes
then put them into a pan cover with water
and three table spoons of white sugar
then boil in bowl for fifteen minutes or until they
are extra soft.
drain.
then put in a oven dish and brush the potatoes
with butter then sprinkle/cover with brown sugar
and then cook in the oven at 350* for 20 min.
then take out cover with marshmallows and put
back into the oven until the marshmallows are
golden brown about ten minutes.
First and most important!!! Do not buy sweet potatoes, buy yams - sweet potatoes are a nasty baby poop green color, yams are the lovely orange color that you see in pictures. It's hard to eat something that looks like baby poop.
