I have a recipe that calls for 1/4 cup of rum. (pumpkin mouse parfaits) What can I substitute instead?!

Question: For 1/4 cup of rum I would substitute 1 tablespoon rum extract plus enough liquid to make 1/4 cup.

Edited to add: I did find this substitute....

"In the spice aisle of your grocery store, with the flavorings and extracts, you will find a rum flavoring. Add a touch of this flavoring to apple juice for a rum substitute that works quite nicely. In a pinch, if you don’t have that rum flavoring, use just the apple juice. " (http://www.preparedpantry.com/printable2... )

2tsps of rum extract or if you have another dark sweet liquor in your cabinet use that Kahlua, amaretto, baileys Irish cream

Any light colored alcohol or nothing at all. 1/4 cup is not very much volume...

you can use rum extract or omit it altogether.
