Can anyone give me a good recipe for a stilton cheese sauce?!

stilton sauce

1 1/2 cups Stilton cheese (Or Mountain Gorgonzola, needs to be a STRONG hard blue cheese)
1/4 cup Hellmann's mayonnaise
salt (optional)
1 teaspoon fresh ground pepper


Shave or crumble about 1- 1 1/2 CUPS of the Blue cheese into a small heavy sauce pan.
Add about 1/4 cup Hellman's full fat mayonnaise. (This is the emumiant that keeps everything together).
I add a LOT (a full teaspoon) of pepper, I grind it right into the pan. Fresh really makes a difference.
Add salt to taste (I don't use any if I use the rind of the cheese as it is often hardened with salt).
Warm the pan slowly while constantly stirring. It will melt, don't give up.
If you heat it too fast, or don't still it will separate.
The mayo will forgive some sins, but not many, so stir!
This will make a THICK sauce.
More mayo will thin it some.
Milk can thin it if it is too strong.

Stilton Sauce

4 oz. Stilton, crumbled
8 oz. cream cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 tbsp. chopped scallions, white and green parts
1 tsp. kosher salt
1/2 tsp. pepper
1/4 tsp. Worcestershire sauce

Blend Stilton. Blend in the rest until smooth.

Serves 4

Stilton Cheese Sauce

1 Tablespoon Butter
2 Shallots (Fine Diced)
2 Cloves Garlic (Chopped)
1 Ounce White Wine
1 Cup Heavy Cream 35%
2 Ounces Stilton Cheese

In a small sauce pan melt butter on medium heat; add shallots and garlic and sauté until they become translucent. Add white wine and reduce by half. Add Cream and bring to a boil and then crumble in the stilton cheese and simmer.

If you want just a basic sauce, make a thin white sauce (butter, flour, salt, pepper, milk - a touch of mustard and worchester, optional), and slowly add the cheese while blending with a wisk. Refrigerate 'til needed, stores well.

Basic Blue Cheese Sauce
This sauce goes well well served over steak or chicken.

2oz blue cheese e.g. Stilton, Roquefort, Gorgonzola
2oz cheddar or gruyere cheese
1 tbsp créme fra?che

Crumble the cheeses, and combine in a small pan with the créme fra?che. Heat gently, stirring with a wooden spoon, until melted. Remove from the heat. Add a little more créme fra?che if sauce is too thick to pour.

Kicked Up Blue Cheese Sauce
Recipe from Food TV network. This sauce is simple and versatile. Serve as a dip for chicken wings or as a spicy salad dressing.

8 ounces ranch style dressing
1/4 cup crumbled blue cheese
1/4 teaspoon cayenne pepper

In a small bowl mix together all ingredients.
