Answers: Anyone have a great potato soup recipe? Thats what my family wants for Christmas dinner?? (I guess) I will be serving ten adults and two small children. What would go best with this??

If you want a really killer potato soup recipe, make stuffed spud soup, or as we call it "heart attack in a bowl".
2 lbs. frozen shredded hash browns, thawed
1/2-cup butter
1/2 cup chopped green onion
1 (10 oz.) can cream of chicken soup
Salt & pepper to taste
3-4 cups half' in half or milk
3 cups shredded cheddar cheese
Parsley flakes or chopped chives for garnish
Sauté's onions in butter. Add soup, half' in half or milk, and thawed potatoes. Stir in cheese and heat gently. Garnish and serve. Serves 8-10.
I usually serve a tossed salad with it, but you may want something a bit fancier for Christmas dinner. How about roasted veggies and a fruit salad like this one?
Holiday Raspberry Salad
Yield: 4 Servings
1 (12 oz.) pkg. Frozen Raspberries
1 can (15 oz.) Applesauce
2 (3 oz.) pkgs. Raspberry Jello
2 cups Hot Water
Dissolve Jello in 2 cups hot water. Add applesauce and thawed raspberries. DO NOT ADD additional cold water to the Jello. Chill until set. Don't worry about a little berry juice, but don't buy berries packed in juice. If so, drain them. You can use strawberry Jello with frozen stawberries, or orange Jello with canned mandarin oranges, instead.
potatoes diced into bite size pieces (I normally use 4 you would probably use about 6.) I can chicken broth,milk ,1&1/2 onions ,diced,garlic powder to taste ,salt and pepper to taste.
Take your onions and in the pot you plan to make the soup in and take a pat of butter and melt in pan add onions and cook untill clear.add your broth and potatoes,now if needed add water to bring the liquid up to the tops of the potatoes. after getting the liquid to the right level bring to a boil and let boil untill potatoes are almost done . Now add milk to bring liquid level about 1/2 over potatoes and turn heat to low,cover and let simmer the last 5 min or so . Remove 1/2 cup of the potatoes and mash them with a fork and add back to the pot(these will be your thickener) add garlic and salt and pepper to taste.
