Replacing Dairy in recipes.?!


Question: I cannot have soy or any dairy products from cows. I'm deathly allergic!! I can have rice milk and goat milk(no whey protein). How do I know the proper amount to cook with when replacing it in recipes or if I can? Like Mashed potatoes? Goat milk is kind of thick and kinda sour so when cooking with it should I use more or less and for longer or the same amount of time. I'm so confused and I need help!!
