Apple Cranberry Streusel Custard Pie

INGREDIENTS
1 (9 inch) unbaked pie crust
1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
1 teaspoon ground cinnamon
2 eggs, beaten
1/2 cup hot water
1 1/2 cups fresh or dry-pack frozen cranberries
2 medium all-purpose apples, peeled and sliced
1/2 cup firmly packed brown sugar
1/2 cup all-purpose flour
1/4 cup butter or margarine, softened
1/2 cup chopped nuts



DIRECTIONS
Place rack in lower third of oven; preheat oven to 425 degrees F. In large bowl, combine sweetened condenensed milk and cinnamon. Add eggs, water and fruits; mix well. Pour into pie crust.
In medium bowl, combine sugar and flour; cut in butter until crumbly. Add nuts. Sprinkle over pie. Bake 10 minutes.
Reduce oven temperature to 375 degrees F; continue baking 30 to 40 minutes or until golden brown. Cool. Store leftovers covered in refrigerator.



Butterscotch Pie---Handed down to me from my grandmother

INGREDIENTS
1 cup quick cooking oats
1/4 cup firmly packed brown sugar
1/3 cup butter, melted
3/4 cup firmly packed brown sugar
1/3 cup sifted all-purpose flour
1/4 teaspoon salt
1 1/2 cups milk
3 tablespoons butter
1 1/2 teaspoons vanilla extract
3/4 cup whipping cream, whipped
6 pecan halves


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Heat oats on a baking sheet in preheated oven for 12 minutes. Set aside to cool.
To Make Crust: In a medium bowl combine oats and 1/4 cup brown sugar together; mix in 1/3 cup butter. Press firmly onto bottom and sides of a 8 inch pie pan. Chill for 1 hour.
To Make Filling: Combine 3/4 cup brown sugar, flour, salt and milk in a medium saucepan. Cook over medium heat until thick, stirring constantly. Remove from heat and stir in 3 tablespoons butter and vanilla. Transfer mixture to a medium bowl; cover with foil and refrigerate for 1 hour or until cold.
Once cold, fold in 1/2 cup of the whipped cream. Pour mixture into pie shell; chill until set. When ready to serve, top with dollops of 1/4 cup of whipped cream and arrange 6 pecan halves decoratively on top of pie.




Black Forest Cake----Awsome

INGREDIENTS
2 1/8 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3 eggs
1 cup milk
1/2 cup vegetable oil
1 tablespoon vanilla extract
2 (20 ounce) cans pitted sour cherries
1 cup white sugar
1/4 cup cornstarch
1 teaspoon vanilla extract
3 cups heavy whipping cream
1/3 cup confectioners' sugar


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch, round, cake pans; cover bottoms with waxed paper.
In a large bowl, combine flour, 2 cups sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and 1 tablespoon vanilla; beat until well blended. Pour batter into prepared pans.
Bake for 35 minutes, or until wooden toothpick inserted in centers comes out clean. Cool layers in pans on wire racks 10 minutes. Loosen edges, and remove to racks to cool completely.
Drain cherries, reserving 1/2 cup juice. Combine reserved juice, cherries, 1 cup sugar and cornstarch in a 2 quart saucepan. Cook over low heat until thickened, stirring constantly. Stir in 1 teaspoon vanilla. Cool before using.
Combine whipping cream and confectioner's sugar in a chilled medium bowl. Beat with an electric mixer at high speed until stiff peaks form.
With long serrated knife, split each cake layer horizontally in half. Tear one split layer into crumbs; set aside. Reserve 1 1/2 cups Frosting for decorating cake; set aside. Gently brush loose crumbs off top and side of each cake layer with pasty brush or hands. To assemble, place one cake layer on cake plate. Spread with 1 cup frosting; top with 3/4 cup cherry topping. Top with second cake layer; repeat layers of frosting and cherry topping. Top with third cake layer. Frost side of cake. Pat reserved crumbs onto frosting on side of cake. Spoon reserved frosting into pastry bag fitted with star decorator tip. Pipe around top and bottom edges of cake. Spoon remaining cherry topping onto top of cake.





Caramel Nougat Cake

11 (2.15 ounce) milk chocolate covered caramel and nougat bars
1 1/2 cups margarine
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup chopped walnuts
2 cups confectioners' sugar


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour and baking soda. Set aside.
In a medium saucepan, melt 8 candy bars with 1/2 cup margarine, stirring until smooth. Remove from heat and set aside to cool.
In a large bowl, cream together 1/2 cup margarine and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Stir in cooled chocolate mixture and chopped nuts.
Pour batter into prepared 10 inch tube pan. Bake in the preheated oven for 40 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 15 minutes, then turn out onto a wire rack and cool completely.
To make the Frosting: In a medium saucepan melt remaining 3 candy bars with 1/2 cup margarine. Stir until smooth. Beat in confectioners' sugar to desired thickness.

Chocolate Chip Cookie Dough Cheesecake

INGREDIENTS
1 1/2 cups finely crushed chocolate wafer cookies
1 cup white sugar
1/4 cup melted butter
2 (8 ounce) packages cream cheese, diced
2 cups sour cream
3 eggs
2 teaspoons vanilla extract
1/4 cup butter
1/4 cup packed brown sugar
1/4 cup white sugar
2 tablespoons water
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 cup semisweet chocolate chips
2 teaspoons white sugar

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).

Mix the chocolate wafer cookie crumbs with 2 tablespoons of the white sugar, and the melted butter. Press firmly into the bottom and 1/2 inch up the sides of one 9 inch springform pan. Bake at 350 degrees F (175 degrees C) for about 8 minutes.

To Make Cookie Dough: In a bowl beat 1/4 cup butter or margarine with the brown sugar and 1/4 cup of the white sugar. Stir in the water and 1 teaspoon of the vanilla. Beat in the flour and the semisweet chocolate chips. Stir until combined.

To Make Cheesecake: In a food processor or with a mixer beat 1 cup of the white sugar, and all the cream cheese. Add 1 cup of the sour cream, the eggs, and 1 teaspoon of the vanilla. Mix well and pour into prepared crust.

Drop cookie dough in 2 tablespoon portions evenly over the top of the cake, pushing dough beneath the surface. Bake at 350 degrees F (175 degrees C) for about 40 minutes. Cake will jiggle slightly in center. Spread topping over hot cake. Let cake cool than chill in a refrigerator until cold, at least 4 hours.

To Make Topping: Mix the remaining 1 cup sour cream, 1 teaspoon vanilla, and the 2 teaspoons white sugar until smooth. Spread over hot cake.

Homemade egg nog, with LOTS of rum. Then everyone will be smashed and won't remember what they liked best, but they'll keep going back for that egg nog.

X-mas fruit tart.

Take 1 12" shortcake (you can get them premade at grocery stores. Spread a layer of strawberry glaze on it and then cover it with sliced strawberries and kiwi fruit. The red and green give an xmas theme (you can even arrange them to make a design if your feeling really creative. For extra splash, sprinkle on pomegranate seeds. This all takes about 20min. and there is no cooking involved.

sugar free christmas cake

1kg mixed dry fruit
2 cups orange juice
2 cups sr flour

soak fruit in oj (1/2 hr min) o/n better. Add flour and mix all ingredients together. Grease cake tin - pour into cake tin and sit in another tin - cook at 180 C or 350 F for 1.5 hours

trust me......bewdiful!
and you can use other juice if you prefer ie : apple juice etc
serve with whipped cream

I have the perfect idea for you...and I do mean perfect!!! They are the cutest cookies I've ever seen! One of my peers made them for the last day of our graduate school semester, and they are so adorable! They are Christmas mice cookies.

What you need(depending on how many you will make, these will vary):
-one/two bag of regular hershey's kisses
-one/two containers of double stuffed oreos
-jars of STEMMED marachino cherries
-baking chocolate (the kind you can melt)
-a bag of sliced almonds
-a tube of red and green gel icing

What you need to do:
1) Twist the oreo carefully to get one side with all of the icing on it (not too hard with the double stuffed oreos)
2) Throw the plain half away, or use them for something else!3) Rinse the cherries, and make sure they have stems on them
4) Melt the baking chocolate in a cup in the microwave
5) Cover your first cherry with the chocolate (not the stem)
6) Place the cherry on the icing of the oreo so that it is on its side and the stem is sticking straight out horizontally to the table (the bottom of the cherry should be towards the center of the cookie)
7) Take a hershey's kiss and press the bottom of it up against the bottom of the cherry (in the center) before the chocolate dries
8) Take two similar almond slices and stick them upright in between the cherry and the kiss

SO FAR: The cherry acts as the mouse's body (stem being the tail), the hershey kiss is the mouse's head, and the almonds are the ears (you can kinda use logic to judge how it should look by that)

9) let the chocolate dry, and then use the red (or green) gel icing to put on two eyes and a dot on the tip of the nose
10) OPTIONAL: to make it more christmas oriented...I put a red dot on the side of the cookie icing, and then two green lines coming away from it to make it look like holly

why not try creme brulee or leche flan.. all you need is a dozen egg yolks, 1 can evaporated milk, 1 can condensed milk and some caramelized sugar for glazing the pan..
-stir, don't beat, egg yolks in bowl. while stirring, add evap milk followed by condensed milk. pour in glazed 8inch pan, cover with aluminum foil, steam or bake for 40minutes..
-may be served cold or room temperature. flip over a round platter and/or topped with fresh fruit and caramelized sugar.

Death By Brownies.............

I make them often, and people LOVE them, even though they are enough to kill off an able bodied man!!

I box of brownie mix.........I prefer the Duncan Hines triple chocolate chunk
1 cup of walnuts (optional)
Fudge Icing ( I like the wal mart brand from a can)
and you'll need a bag of mini marshmellows

Make the brownies according to directions for Cake Like Brownies.
BUT....bake them in an 8X8 inch square pan
This will make them so dense, that it may create a black hole in your oven, so, beware!!!
it will take about 50-55 minutes for them to be done.
When you take them out, turn off the oven, but......
Put a layer of the Mini Marshmellows on top.....pop them back into the oven until they get puffy, and warmed through about 2 minutes, NO LONGER, you don't want them to brown!!!!

Cool, completly, then frost with the Fudge Icing, add some holiday color sprinkles, and Done!!

I've never had any one NOT eat these, please make sure that milk or drink is available to anyone who dares try to eat them!!!

They will be VERY heavy!
But everyone will LOVE them!!

STRAWBERRY PRETZEL JELLO SALAD

BOTTOM CRUST LAYER:

2 c. crushed pretzels
3/4 c. melted butter
3 tbsp. sugar

MIDDLE LAYER:

1 (8 oz.) cream cheese
1/2 c. sugar
1 (9 oz.) Cool Whip

TOP LAYER:

1 lg. pkg. strawberry Jello
2 c. boiling water or pinapple juice
1 (10 oz.) pkg. frozen strawberries and juice (slices)

Mix ingredients of bottom layer and bake at 325 degrees for 10 minutes. Cool, then press into 9x13 pan. Beat ingredients of middle layer until stiff; spread on cooled pretzel mixture. Mix ingredients of top layer. Cool. When this starts to set, pour on top. Refrigerate until set. Cut in squares.

Try a Marciamisu. It is a variation on Tiramisu invented by my wife. The difference is that you use Kebler Vienna Finger cookies rather than cake or ladyfingers. It is real good and somewhat out of the ordinary.

5 extra large egg yokes
5 tablespoons sugar
1 & 2/3 cup mascarpone cheese, chilled
1 $ ? cups heavy cream, chilled
? cup brewed strong coffee

24 Kebbler Vienna Finger Cookies
Raspberries, optional
Dutch-processed cocoa

In a bowl, using an electric mixer set on high, beat yokes and sugar 5-7 minutes. Add cheese and beat another 3-4 minutes. In another bowl with clean beaters, whip cream until soft peaks form. Fold cream into yolk mixture.

In a small bowl mix espresso and liqueur. Arrange ladyfingers in single layer over bottom of decorative bowl. Brush espresso mixture on both sides of ladyfingers. Continue until all is used. Cover; chill 6 hours to 2 days. Sift chocolate over top using a fine mesh sieve.


(To make a more traditional Tiramisu, use 24 lady fingers, or pieces of sponge cake rather than the Vienna Fingers.)

Try Death by Chocolate

1 chocolate cake, plain, without frosting, split in half horizontally
2 C chocolate pudding
2 C cool whip
14-1/3 C Kahlua or other coffee liquor or strong coffee
skor bars or other chocolate coated toffee crushed
grated dark chocolate

Place 1 half layer of cake in the bottom of a trifle bowl, sprinkle with some of the Kahlua, spread with 1/4 of the pudding and cool whip, sprinkle with toffee pieces and grated chocolate. Repeat layers ending with the last of the cool whip. Decorate the top with grated dark chocolate and if desired well drained maraschino cherries.

The trifle dish makes a really pretty presentation but you can serve this in any dish and the cake does not have to be left whole, it can be cubed and will work just as well.
