most of the time all you do to make the cheesecake crust is measure out so many cups of graham cracker crumbs, some brown sugar and melted butter....mix it all together and press into your pan....usually homemade cheesecake recipes will give you the measurements....such as with this apple pecan cheesecake:
1 1/2 c. graham cracker crumbs
1/4 c. butter, melted
4 (8 oz) pkg cream cheese, softened
1 1/2 c. firmly packed brown sugar, divided
1 c. sour cream
4 eggs
4 c. chopped peeled apples (3 med)
3/4 c. chopped pecans
1 t. cinnamon
1 t. vanilla
Preheat oven to 325 degrees. Line 13 x 9 baking dish with foil with ends extending over sides. Mix crumbs, butter and 2 T. brown sugar. Press firmly onto bottom of pan. Beat cream cheese, 1 c. brown sugar and vanilla with electric mixer on med until well blended. Add sour cream, mix well. Add eggs one at a time mixing after each addition until blended. Pour over crust. Mix remaining brown sugar, apples, pecans, and cinnamon. Spoon evenly over cheesecake batter. Bake 55 min or until center is almost set. Refrigerator 4 hours or overnight. Let stand at room temp for 3o min before serving.
I love cheesecake so I would say go for the red and green cheesecake!! The tree or snowman cake would be very festive as well..

You use crushed graham cracker and melted butter, or for a chocolate crust, oreos. They sell graham cracker crumbs in the store or you can make your own by sticking graham crackers in a plastic bag and crushing them with a rolling pin or glass. Then you add in enough melted butter to make the crumbs moist enough to press into the pan.
A spiced or pumpkin cheesecake would be great for the holidays.

first of all, the bottom of the cheesecake is made out of pureed graham crackers. First you melt maybe 1-2 tablespoons, Pulse the graham cracker( whatever flavor you like). After you've pulsed to the consistency you like. You can add walnut, pecan...no peanuts! Time for spices: cinnamon, sugar, etc. Place at the bottom of spring-form pan, and bake.

SOOO easy. Just crush up graham crackers or nilla wafers or even oreos... mix them with a bit of melted butter that will allow them to stick together and make a stiff dough and then press them down into your pan. Put them in the oven for about 15 min so that they stiffen a bit and dry out (otherwise they stay mushy in your cheese cake...not good). Once you take them out of the oven you can put the cheese cake mixture on top and bake as usual. I like the Red and Green cheesecake idea. A friend of mine actually makes a mint chocolate cheesecake that is yummie and she adds a bit of green food coloring at the last minute so that it streaks in the cheesecake but doesn't turn the whole thing green.

Keebler sells Graham Cracker Crumbs so you can make your own crust OR you can buy whole graham crackers and crush them up yourself OR a ready made crust.
Graham Cracker Pie Crust
2 cups finely ground graham crackers (about 30 squares)
1/2 teaspoon ground cinnamon
1 stick unsalted butter, melted
Preheat the oven to 325 degrees F.
In a mixing bowl, combine the crust ingredients with a fork until evenly moistened. Lightly coat the bottom and sides of an 8-inch springform pan with nonstick cooking spray. Pour the crumbs into the pan and, using the bottom of a measuring cup or the smooth bottom of a glass, press the crumbs down into the base and 1-inch up the sides. Refrigerate for 5 minutes.
